  • 2 teaspoons Baking Soda

  • 1 Cup Canola Oil
  • 2 Cups Granulated Sugar
  • 3 large Eggs
  • 1/2 Cup Sour Cream
  • 4 Cups Shredded Zucchini
  • 2 Tablespoons Cinnamon Sugar, or to taste (for topping)

  1. Preheat the oven to 350 degrees F (175°C).
  2. Spray two 9×5-inch loaf pans with nonstick spray.
  3. Wipe down the top 1-inch edge all the way around the pan (this helps the bread rise with a domed top).

Close the door and bake for the remaining 10 minutes, or until a toothpick inserted in the middle comes out clean.
  10. Once the bread is done, open the oven door, turn off the oven, and let the bread rest for 2-3 minutes inside the oven, no longer. Then, carefully remove it to the counter for a few more minutes.
  11. At this point, slide a knife around the inside of the pan and carefully turn the bread out into your other hand or directly onto a cooling rack if you are gentle. Place it right side up and allow to cool or, like us, dig in because warm bread is the best! (See note below).

If you prefer, you can set the bread pan on a cooling rack instead of transferring the loaf out of the pan immediately. Zucchini bread can be frozen for up to 3 months.
