  • 1 Red Onion, minced fine
  • 2 Stalks Celery, minced
  • 5 Cloves Garlic, minced fine
  • 15 oz Chickpeas, drained and pulsed
  • 2 Cans Tomato Sauce, 15 oz. cans
  • 15 oz Tomatoes, fire roasted
  • 1/2 Cup Almond Milk
  • 1 Dash Cooking Wine (white) *SEE NOTE
  • 1 Lemon, zested
  • 1 Squeeze Lemon Juice
  • 1 Dash Nutmeg
  • 2 Bay Leaves
  • Salt and Pepper to taste
  • Parmesan cheese for serving (optional, use vegan parmesan for vegan option)

Instructions

  • Heat an oven to 425 degrees F (220 C).
  • Place 2 Cups of fresh tomatoes on a baking sheet and drizzle with 1/3 cup olive oil and salt. Roast for 20 minutes or until soft and charred bits are appearing.
  • Remove the roasted tomatoes and set aside to cool slightly. Once cooled, blend them in a blender to create a homemade tomato sauce.
  • Pulse the mushrooms in two batches in a food processor or blender until chopped into 1/8- to 1/4-inch pieces.
  • Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add the chopped mushrooms and cook, stirring occasionally, until they have browned and a rich “fond” (caramelized bits) develops on the bottom of the pan. This fond is crucial for depth of flavor. Add a pinch of salt, stirring it in evenly.
