Can You Make Potato Rolls Ahead of Time?

Absolutely! The convenience of making these delicious potato rolls in advance is one of their many advantages, especially when planning for holidays or busy weeknights. There are two excellent methods to prepare them ahead of time:

  1. Method 1: Refrigerate the Dough. Prepare the dough according to the recipe instructions. Once it’s mixed, cover the bowl tightly with plastic wrap and place it in the refrigerator overnight. The next day, remove the bowl from the fridge and allow it to come to a comfortable room temperature (this might take an hour or two, depending on your kitchen’s warmth). Once the chill is off, proceed with the shaping and baking steps as normal. This method allows for a slow, flavorful rise and makes baking day much less hectic.
  2. Method 2: Refrigerate Shaped Rolls. Allow the dough to complete its first rise. Then, punch it down, shape the rolls as desired (knots or crescents), and arrange them on a greased baking sheet. Cover the entire sheet loosely but securely with plastic wrap to prevent drying. Place the baking sheet in the refrigerator overnight. On baking day, remove the rolls from the fridge and let them sit at room temperature for 1-2 hours to take the chill off and allow for a second rise before baking. This method is perfect for getting a head start on baking, ensuring fresh, warm rolls when you need them.

How Long Do The Best Potato Rolls Last?

Thanks to the unique properties of potato starch molecules, these incredible potato rolls boast an impressive shelf life, remaining wonderfully soft for several days. Potato starches effectively prevent wheat starches from becoming stale, ensuring your rolls stay fresh and delightful much longer than traditional bread.

To maximize their freshness, allow the potato rolls to cool completely after baking. Once thoroughly cooled, transfer them to an airtight plastic storage bag or wrap them tightly in aluminum foil. Store them at room temperature, away from direct sunlight or heat.

Properly stored, your homemade potato rolls will retain their exceptional softness and flavor for approximately 5 to 7 days at normal room temperature. However, let’s be honest: these rolls are so irresistibly delicious that you might not have any leftovers to store!

Can You Freeze The Best Potato Rolls?

Yes, freezing is an excellent way to preserve these delightful potato rolls and enjoy their fresh taste whenever a craving strikes. You have two convenient options for freezing:

  • Freeze Baked Rolls: Bake the potato rolls as you normally would, as if you were going to serve them immediately. Once they are perfectly golden and baked through, let them cool completely on a wire rack. This step is crucial to prevent condensation and ice crystals from forming. Once fully cooled, wrap each roll tightly in aluminum foil. Then, place the foil-wrapped rolls into a freezer-safe bag or an airtight storage container. They can be frozen for up to one month. To reheat, simply unwrap and warm in a preheated oven (around 300-325°F or 150-160°C) until heated through and soft, about 10-15 minutes.
  • Freeze Unbaked Dough: Alternatively, you can freeze the shaped, unbaked dough. After rolling out and shaping the dough into knots or crescent rolls, arrange them on a cookie sheet lined with parchment paper. Flash freeze them for about an hour until firm. Once frozen solid, transfer the individual rolls to freezer-safe bags or containers. This method allows you to pull out only as many rolls as you need. When ready to bake, place the frozen shaped rolls on a greased baking sheet, cover with a towel, and let them thaw and rise at room temperature for several hours (4-6 hours, or until doubled in size), then bake according to the recipe instructions. This offers the freshest possible taste, as if they were just made.

How to Make Homemade Potato Rolls

Crafting these delectable potato rolls is a rewarding process, surprisingly straightforward even without the arduous task of kneading. Each step is designed for ease and enjoyment, promising a truly satisfying baking experience.

First, you’ll prepare the foundational dough. While it requires time for rising, this hands-off period allows you to effortlessly manage other tasks. The magic truly begins as the dough patiently develops its exquisite flavor and texture on your counter. This initial rise is crucial, but it demands very little active participation, making it perfect for a busy schedule.

Next, the shaping process unfolds. Gently roll out your beautifully risen dough. Take half of this rolled dough and generously butter it with very soft butter. Then, carefully fold the unbuttered half over the buttered side, pressing lightly to seal the edges. This technique creates delicate, buttery layers that will contribute to the rolls’ incredible tenderness.

Following this, slice the folded dough into uniform strips. A good guideline for size is about the tip of your thumb to the knuckle. For those longer strips, feel free to cut them in half if you prefer smaller rolls. However, if you, like me, appreciate a generously sized roll, you can leave them longer. The choice is entirely yours, allowing for customization to suit your preference.

Step-by-step guide on how to tie potato rolls into perfect knots.

Finally, the creative step of shaping the rolls into knots – a process that is remarkably simple once you get the hang of it. Just like tying your shoe, cross the ends of a dough strip and pull one end through the loop to create a neat knot. Once your rolls are shaped, you can either place them directly onto a lightly greased baking sheet or, for a more polished look, gently tuck the little end underneath each roll as shown in the image below. This simple detail creates a beautifully rounded base. Don’t forget the ultimate reward: savoring one of these warm, buttery rolls straight from the oven. The experience is truly heavenly – the best potato rolls literally melt in your mouth, a perfect blend of softness and rich flavor.

How to Shape Potato Rolls Like Crescent Rolls

If you prefer the elegant shape of crescent rolls over knots, the process is equally simple and yields beautiful results. Instead of slicing the folded dough into strips, you will roll out four equal circles of dough. Take two of these circles and butter them generously. Then, stack the unbuttered circles directly on top of the buttered ones, creating two buttered dough “sandwiches.” From these buttered dough circles, use a pizza cutter or sharp knife to slice them into wedges, much like you would a pizza. Starting at the wide end of each wedge, tightly roll the dough towards the point, forming classic crescent shapes. Arrange these on your prepared baking sheet, allow them to rise, and bake to golden perfection. The buttery layers will separate during baking, creating a flaky, irresistible texture.

Remember to enjoy at least one roll fresh out of the oven. The warmth combined with the melt-in-your-mouth texture is an experience akin to heaven. These truly are the best potato rolls.

Why are The Best Potato Rolls Lighter Than Other Rolls?

The superior lightness and moist texture of these potato rolls are not by chance; they are the result of a fascinating interaction between potato and wheat components:

  • Starch Molecule Expansion: When potatoes are boiled and then incorporated into the dough (in the form of potato flakes), their starch molecules enlarge significantly. These enlarged starch molecules interfere with the ability of the flour proteins to form long, strong gluten strands. Gluten, while essential for bread structure, can also lead to a denser, chewier texture. By inhibiting excessive gluten development, the potato allows for a lighter, more tender crumb.
  • Accelerated Yeast Activity: Potatoes naturally contain potassium, which acts as a stimulant for yeast. This means the yeast in potato roll dough often rises faster and more vigorously than in breads made solely with wheat flour. A more active yeast leads to a quicker rise and a more aerated, fluffy final product.
  • Enhanced Moisture Retention: Potato starches possess a remarkable ability to absorb and retain more water compared to wheat starches. This increased moisture absorption contributes directly to the rolls’ incredibly moist, soft texture, preventing them from drying out quickly and keeping them fresh for longer.

Potato Flakes (or Potato Pearls)

We highly recommend using quality dehydrated potatoes as they are key to achieving the best flavor and the incredibly tender texture that sets these rolls apart.

Dough Scraper

Any sturdy scraper will do, but a plastic dough scraper is invaluable for efficiently gathering dough and flour from your counter and bowls, making cleanup significantly faster and easier.

Silpat Baking Mat

A Silpat baking mat is a game-changer for all your baking needs. From cookies to rolls and even loaf breads, it ensures even cooking and prevents sticking, eliminating the need for any spray or additional greasing.

Nordic Ware Cookie Sheet

The quality of your cookie sheet can profoundly impact your baking results. A light-colored, heavy-gauge cookie sheet, like those from Nordic Ware, ensures even heat distribution and prevents your food from browning too quickly or unevenly.

Stainless Steel Mixing Bowls

While glass bowls have their place, a set of good quality stainless steel mixing bowls in various sizes is essential for any baker. They are durable, versatile, and ideal for everything from mixing dough to preparing fillings.

These potato rolls require no kneading and are hands down the best rolls we’ve ever had. Our number one most requested recipe for any occasion!

Our famous potato rolls recipe, known for being incredibly soft and delicious.

Ingredients

  • 3/4 Cup Sugar
  • 1 1/2 Sticks Land O’Lakes Unsalted Butter (3/4 Cup)
  • 3 Cups Scalded Milk* (instructions below)
  • 1 Cup Potato Flakes
  • 1 Tablespoon Salt
  • 4 Eggs
  • 1 Tablespoon Instant Yeast (or 2 Tablespoons Regular Yeast; instant is preferred)
  • 7 Cups Flour
  • *1/3 cup additional butter, softened (for shaping)

Instructions

  1. Heat a medium saucepan over medium heat and add the milk.
  2. Cook until the edges begin to foam and froth, but do not allow it to boil. A thin layer of milk “skin” will form on top.
  3. Remove from heat and stir in the sugar, butter, potato flakes, and salt.
  4. Stir thoroughly until combined and allow the mixture to cool to a lukewarm temperature.
  5. Add the instant yeast, stir, then add the eggs, mixing until they are fully incorporated.
  6. Place the 7 cups of flour in a large mixing bowl.
  7. Pour the lukewarm milk mixture into the flour and stir until the dough just comes together. It will be a soft, slightly sticky dough, not a firm bread dough. You may only need 6 to 6 1/2 cups of flour.
  8. Cover the bowl loosely with a clean kitchen towel or plastic wrap.
  9. Let the dough rise in a warm place for one hour, or until doubled in size.
  10. Once risen, gently push down the dough to release the air. Divide the dough into 4 equal parts. Roll out one portion at a time into a 1/2-inch thick circle. Spread about 1/3 cup of softened butter over two of the four dough circles. Place the unbuttered dough circles directly on top of the buttered dough circles and gently press to seal.
  11. Cut the buttered and stacked dough into 1-inch wide strips, or 16 wedges if you prefer crescent shapes. For knots, pick up one strip at a time and tie it into a simple knot (like tying a shoe). If making wedges, start at the wide end and tightly roll into crescent rolls.
  12. Place the shaped rolls on a lightly greased cookie sheet, leaving some space between them. Cover with a towel and let rise for another 1-2 hours, or until doubled in size.
  13. Preheat your oven to 350°F (175°C).
  14. Bake the rolls for 14-20 minutes, or until they are golden brown on top and cooked through.

Recipe Notes

  • If you’re ever short on butter, butter-flavored shortening can be used as a substitute without compromising too much on flavor.
  • Scalding milk is simpler than it sounds: just heat it over medium-low heat until small foamy bubbles appear around the edges of the pan. Gently touch the surface with a wooden spoon to check for a slight skin. Ensure it does not boil.
  • Bread making, especially for beginners, can feel uncertain initially. Don’t worry if the dough looks shaggy or not perfectly smooth; it’s a process that improves with practice. These rolls are very forgiving.
  • To make ahead: Let the dough rest covered in the fridge overnight after the initial mix. The next day, bring it back to room temperature before rolling out and proceeding with shaping and baking.
  • Properly stored in an airtight bag at room temperature, these rolls will stay wonderfully soft for up to 7 days.
