Growing up, I was known for being a picky eater – a fact my dear mother will undoubtedly corroborate with a smile and a sigh. Yet, there was one dish I never, ever turned down: potatoes au gratin. And really, what’s not to adore? It’s a symphony of simple, wholesome ingredients: tender potatoes, luxurious cream, and an abundance of rich, melted cheese. It’s a dish that transcends generations, consistently bringing smiles to every face at the dinner table. Our Instant Pot version captures all that beloved flavor and creamy texture, making it an accessible joy for every home cook.
Why the Instant Pot is a Game-Changer for Cheesy Potatoes
The Instant Pot isn’t just a kitchen gadget; it’s a multi-functional marvel that revolutionizes cooking. For cheesy potatoes, its pressure cooking capability is a true game-changer. Traditionally, achieving perfectly tender potatoes in a creamy sauce can take a significant amount of time in the oven. The Instant Pot dramatically cuts down on cooking time, allowing you to enjoy this comforting side dish even on your busiest days. It ensures even cooking, infusing every potato slice with flavor and creating an impossibly creamy texture that usually requires much longer simmer times. Plus, it keeps your oven free for other delicious components of your meal!
Essential Ingredients for Your Creamy Cheesy Potatoes
The beauty of this dish lies in its simplicity. While some recipes might surprise you with an unexpected ingredient, ours relies on a straightforward list that combines to create pure magic. Trust me on the nutmeg – it adds a subtle warmth and depth that elevates the cheese and cream without overpowering the dish. Here’s what you’ll need:
- Potatoes: We highly recommend Russet potatoes for their ideal starch content, which contributes to the creamy texture and holds up well under pressure cooking.
- Heavy Whipping Cream: The cornerstone of richness and creaminess. Don’t skimp on this for the best results!
- Garlic: Freshly minced garlic provides an aromatic foundation that complements the cheese beautifully.
- Nutmeg: Just a pinch is all it takes to add a sophisticated, warm note that truly enhances the other flavors.
- All-Purpose Flour: A small amount helps to thicken the cream sauce, ensuring it clings perfectly to every potato slice.
- Salt & Pepper: Essential seasonings to bring out the natural flavors of the potatoes and cheese.
- Mozzarella Cheese: Known for its incredible melt and stretch, creating those satisfying cheesy pulls.
- Cheddar Cheese: Offers a sharp, robust flavor that balances the mildness of mozzarella. Feel free to use your favorite type!
Let’s hear it for cheese! Hip, hip, hooray! Hip, hip, hooray! And a final hip, hip, hooray! For an exceptional taste, we always opt for high-quality cheese, like Tillamook, because it truly makes a difference in the final product’s creaminess and flavor. However, feel free to use your preferred brand!

Essential Equipment for Instant Pot Cheesy Potatoes
While the Instant Pot does most of the heavy lifting, a few key tools will make your preparation seamless and efficient:
- Instant Pot (Pressure Cooker): The star of the show, allowing for quick and efficient cooking.
- Mandolin Slicer: For achieving uniformly thin potato slices, which is crucial for even cooking and the perfect au gratin texture. If you don’t have one, a sharp knife and steady hand will work, but a mandolin truly simplifies this step.
- Oven-Safe Round Pan: A pan that fits snugly inside your Instant Pot (typically an 8-inch round with 2-inch high sides works well). This allows for easy transfer to the broiler for that golden, bubbly cheese crust.
- Trivet: Essential for keeping your pan elevated above the water in the Instant Pot liner, ensuring proper steaming and pressure cooking.
- Whisk: For smoothly combining the cream sauce ingredients.
- Mixing Bowls: For preparing the potatoes and the sauce.
- Cooking Spray: To prevent sticking.
Step-by-Step Guide to Making Instant Pot Cheesy Potatoes
Get ready to create a masterpiece with minimal effort! This recipe is incredibly straightforward, allowing you to achieve restaurant-quality cheesy potatoes right at home.
- Prepare the Potatoes: Begin by washing and peeling your Russet potatoes. Using a mandolin, thinly slice the potatoes into uniform rounds (about 1/8 to 1/4 inch thick). Consistency in thickness is key for even cooking.

- Whisk the Cream Sauce: In a medium bowl, combine the heavy whipping cream, minced garlic, a pinch of nutmeg, flour, salt, and freshly ground black pepper. Whisk until all ingredients are thoroughly combined and the mixture is smooth. This forms the rich, savory base of your cheesy potatoes.
- Assemble the Layers: Lightly spray an oven-safe round pan (that fits inside your Instant Pot) with cooking spray to prevent sticking. Arrange half of the thinly sliced potatoes in an even layer at the bottom of the pan. Sprinkle half of the shredded mozzarella and cheddar cheese over the potatoes. Carefully pour half of the prepared cream sauce over the cheese layer. Repeat this layering process with the remaining potatoes and cream sauce, making sure to reserve the second half of the cheese for topping later. This layering ensures every bite is infused with flavor and creaminess.

- Pressure Cook to Perfection: Pour 1.5 cups of water into the liner of your Instant Pot. Place your trivet inside the Instant Pot. Carefully lower your pan of layered potatoes onto the trivet. Close the Instant Pot lid, ensuring the sealing ring is properly in place. Rotate the pressure release valve to the “Sealing” position. Select “Manual” or “Pressure Cook” and set the cooking time to 25 minutes on High Pressure.
- Quick Release and Broil: Once the cooking cycle is complete, perform a Quick Release of the pressure by carefully turning the pressure release valve to “Venting.” Be cautious of the hot steam. Once the pressure is fully released and the float valve drops, open the lid. Carefully lift the pan out of the Instant Pot using the trivet handles and transfer it to a baking sheet.
- Achieve Golden Goodness: Evenly sprinkle the remaining cheese over the cooked potatoes. Place the baking sheet with the pan under a preheated oven broiler on high for approximately 3 minutes, or until the cheese is melted, bubbly, and beautifully golden brown. Keep a close eye on it to prevent burning. If you prefer to skip the broiler, you can simply add the remaining cheese to the hot potatoes in the Instant Pot, place the lid back on for about 5 minutes, and let the residual heat melt the cheese before serving.
- Serve and Savor: Remove from the oven, let it cool for a few minutes, and then serve your magnificent Instant Pot Cheesy Potatoes! Bon appétit!

Expert Tips for Making the Best Cheesy Potatoes
Even though this recipe is incredibly easy, a few tricks can ensure your Instant Pot cheesy potatoes are nothing short of spectacular:
- Choose the Right Potatoes: For the best texture, we highly recommend good old Russet potatoes. Their starchy nature helps create a wonderfully creamy sauce and they hold their shape well in the pressure cooker. Yukon Golds are another excellent choice for a slightly firmer, buttery texture. Avoid waxy potatoes like red or new potatoes, as they can become too mushy.
- Customize Your Cheese Blend: While the combination of mozzarella (for melt) and cheddar (for flavor) is our go-to, feel free to get creative! For a little kick, try adding some Pepper Jack. Smoked Gouda would lend a divine, complex flavor. Fontina or Gruyère could also add sophisticated notes. The key is to use freshly grated cheese, as pre-shredded varieties often contain anti-caking agents that can hinder smooth melting.
- Achieve the Perfect Golden Top: For that irresistible crispy, golden cheese crust, we love to transfer our cooked potatoes to the oven broiler for a few minutes. Watch it carefully, as it can go from perfect to burnt very quickly! If you don’t have a broiler or prefer not to use it, simply add the remaining cheese to the hot potatoes in the Instant Pot, put the lid back on (without sealing), and let the residual heat melt the cheese for about 5-7 minutes.
- Trivet Alternatives: If you don’t have the specific Instant Pot trivet, any heat-resistant object that can elevate your pan above the water line will work. This could be a metal steamer basket turned upside down or even balls of aluminum foil, ensuring stability for your pan.
- Even Slicing is Key: Whether you use a mandolin or a sharp knife, try to slice your potatoes as uniformly as possible. This ensures that all potato slices cook evenly and reach that perfect tender consistency at the same time.
- Don’t Skimp on the Cream: Heavy whipping cream is crucial for the richness and velvety texture of this dish. Lower-fat dairy alternatives may result in a thinner, less satisfying sauce.
- Prep Ahead Option: You can peel and slice the potatoes a few hours in advance. To prevent them from browning, place them in a bowl of cold water (fully submerged) and keep them in the refrigerator. Drain thoroughly before layering.

Frequently Asked Questions About Potatoes and Cheesy Potatoes
Are Potatoes Good For You?
Potatoes often get a bad rap, but in moderation, they can be a highly nutritious part of your diet! They are an excellent source of dietary fiber, which aids digestion and promotes satiety, helping you feel full longer. They are also rich in essential vitamins and minerals, including a significant amount of potassium (important for blood pressure regulation), Vitamin C (an antioxidant), and Vitamin B6 (vital for brain health). Naturally low in cholesterol and fat, potatoes can be a healthy food choice. However, how you prepare them makes all the difference! While bathing them in butter or burying them in copious amounts of cheese and cream, as we might do in this delightful recipe, changes their nutritional profile, in their natural state, potatoes are indeed beneficial for heart health and overall wellness.
Are Potatoes Keto-Friendly?
Unfortunately, no. Potatoes are not considered suitable for a ketogenic (keto) diet. This is because they are a starchy vegetable, high in digestible carbohydrates and low in fiber. A ketogenic diet focuses on very low carbohydrate intake to induce a state of ketosis, where the body burns fat for fuel instead of carbs. Due to their high carbohydrate content, potatoes would typically exceed the daily carb limit for those following a keto diet and should be limited or avoided.

How Long Will Cheesy Potatoes Keep and Can I Freeze Them?
Leftover cheesy potatoes are a treat! They will keep beautifully in an airtight container in the refrigerator for up to 4 days. For longer storage, you can absolutely freeze them. Once completely cooled, transfer the cheesy potatoes to a freezer-safe container or wrap tightly in foil and then place in a freezer bag. They can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
What’s the Best Way to Reheat Cheesy Potatoes?
Reheating cheesy potatoes, or potatoes au gratin, is simple and offers a few options depending on your preference:
- Oven: This is our favorite method, especially if you love that crispy, golden cheese topping. Preheat your oven to 350°F (175°C). Place the cheesy potatoes in an oven-safe dish, cover loosely with foil, and bake for 20-30 minutes, or until heated through. For a crispy top, remove the foil for the last 5-10 minutes.
- Microwave: For a quick reheat, place a single serving on a microwave-safe plate. Cover and microwave on high for 1-2 minutes, stirring halfway through, until hot. Be aware that the cheese might not be as crispy.
- Skillet: For smaller portions, you can reheat in a skillet over medium-low heat. Add a splash of milk or cream to help restore moisture, cover, and cook until heated through, stirring occasionally. This can also help achieve some crispiness on the bottom.
With their velvety texture, rich cheese, and tender potatoes, these Instant Pot Cheesy Potatoes are the epitome of comfort food. They’re surprisingly simple to prepare, yet deliver on flavor and satisfaction every single time. Make them a staple on your dinner table and watch them disappear!
