The Story Behind Our Pie-Inspired Cookies

Our journey into the world of pie-inspired cookies began with a simple craving for something truly unique. It started with a peach crisp cookie, a decadent fusion that perfectly captured the essence of both a peach crisp and a peach cobbler. The success of that venture naturally led to the creation of an apple crisp cookie, which proved to be absolutely divine.

With a taste for these innovative dessert hybrids, it was only a matter of time before we ventured into cream pie territory. This creative exploration first gave birth to the bright and zesty key lime pie cookie, swiftly followed by the warmly spiced pumpkin pie cookie. With each new creation, we often heard comparisons to popular Crumbl cookie flavors. It seems the universe of delicious cookies has many delightful overlaps! While these recipes genuinely spring from our own culinary imagination, we’re happy for them to be known as fantastic Crumbl cookie copycat recipes.

Indeed, Crumbl offers a banana cream pie cookie, but we confidently believe our homemade version stands out. Crafted with attention to detail and a touch of passion, our recipe achieves a superior balance of flavor and texture that truly elevates the classic banana cream pie experience. We invite you to discover the difference and let your taste buds be the judge! 🤫

Unveiling the Perfect Banana Cream Pie Cookie: What Makes It Special?

What makes these banana cream pie cookies so utterly irresistible? It’s the harmonious marriage of two distinct yet complementary components: a decadent, creamy banana filling and a perfectly textured cookie base. The base captures the buttery, slightly crumbly essence of a graham cracker crust, providing the ideal foundation for the rich topping. The filling, meanwhile, is a symphony of real banana flavor, velvety pudding, and a delightful lightness that makes each bite a dream. Together, they create a dessert that is both familiar and exciting, offering all the delightful elements of a classic banana cream pie in a convenient, shareable cookie format.

Essential Ingredients for Baking Bliss

Crafting these extraordinary banana cream pie cookies requires a thoughtful selection of ingredients, divided into two key components. Each ingredient plays a vital role in achieving the perfect texture and unforgettable flavor profile. Here’s a closer look at what you’ll need for both the luscious filling and the sturdy, flavorful cookie base:

For the Luscious Banana Cream Filling

  • Bananas: The star of the show! Opt for slightly ripe bananas – bright yellow with just a few small brown spots. These will provide the best natural sweetness and authentic banana flavor to your filling.
  • Whole Milk: This liquid base is crucial for combining with the pudding powder, creating that wonderfully smooth and creamy texture we all love in a pie filling.
  • Instant French Vanilla Pudding Mix: The secret to a quick and stable filling. Be sure to choose an *instant* pudding mix, not the “cook and serve” variety, for optimal results and ease.
  • Cream Cheese: Adds a subtle tang and incredible richness to the filling, enhancing its creamy consistency and depth of flavor. Ensure it’s softened for smooth blending.
  • Sweetened Condensed Milk: A powerhouse of sweetness and an essential contributor to the filling’s luxurious, velvety texture. It makes the filling irresistibly smooth and decadent.
  • Cool Whip: This ready-made whipped topping provides lightness and stability to the filling. While you could use fresh whipped cream, Cool Whip is known for holding its thickness and structure much better, ensuring your cookies stay picture-perfect.

Crafting the Perfect Cookie Base

  • Unsalted Butter: The foundation of a rich, tender cookie. It must be softened, but not melted, to cream properly with the sugars and create the right dough consistency.
  • Cream Cheese: Incorporating softened cream cheese into the cookie dough adds an unparalleled softness and a delightful, subtle tang that complements the banana filling beautifully.
  • Brown Sugar: Contributes to the cookie’s moistness, chewiness, and a deeper, more caramelized flavor profile, mimicking the warmth of a pie crust.
  • White Sugar: Provides essential sweetness and helps achieve that slightly crisp edge while keeping the interior tender.
  • Vanilla Extract: A classic flavor enhancer that deepens the overall taste of the cookie, adding a warm, aromatic note.
  • Eggs: Bind the ingredients together, providing structure and richness to the cookie dough, ensuring a perfect texture.
  • Almond Extract: This ingredient is entirely optional, but a small touch can add a unique depth and complexity that many find irresistible, subtly elevating the cookie’s flavor.
  • All-Purpose Flour: The primary dry ingredient, providing the necessary structure to form the cookie base.
  • Cornstarch: The secret weapon for extra chewiness! It helps tenderize the flour, resulting in a wonderfully soft and satisfying cookie texture.
  • Baking Powder and Baking Soda: These leavening agents work in tandem to give the cookies their ideal fluffiness and rise, preventing them from becoming too dense.
  • Salt: A crucial ingredient that balances and enhances all the other flavors, bringing out the best in both the sweet and savory notes.
  • Graham Cracker Crust: This is where the “pie” inspiration truly shines! You’ll use either store-bought or homemade graham cracker crumbs (or crushed vanilla wafers for an alternative) both mixed into the cookie base and sprinkled on top for that authentic pie crust experience.
  • Nilla Wafers: Perfect for a decorative and delicious garnish on top of the finished cookies, adding a classic touch and extra crunch.

Step-by-Step Guide to Homemade Banana Cream Pie Cookies

Creating these sensational banana cream pie cookies is a two-part process, ensuring both components are perfectly prepared before assembly. We’ll begin by crafting the creamy, banana-filled center, allowing it to chill while we prepare the delectable cookie base. Follow these simple steps for a truly rewarding baking experience:

Preparing the Velvety Banana Cream Filling

The first step to these delightful cookies is making the rich and creamy banana filling, which features a French vanilla pudding base studded with chunks of real banana. Preparing it first allows it to chill and thicken, ensuring it’s perfectly set when you’re ready to fill your cookies.

  1. Chop the Bananas: Begin by cutting your ripe bananas into uniform 1/2-inch pieces. This ensures an even distribution of banana flavor and texture throughout the filling. Set these aside.
  2. Whisk the Pudding Base: In a medium bowl, combine the whole milk with the instant French vanilla pudding powder. Whisk vigorously until the mixture is thoroughly combined and smooth. Let it sit undisturbed for about 2-3 minutes; this short resting period allows the pudding to begin thickening, creating a sturdy base for your filling.
  3. Beat the Creamy Elements: In a separate, larger bowl, add the softened cream cheese. Using an electric mixer, beat the cream cheese until it is completely smooth and free of any lumps. Next, pour in the sweetened condensed milk and continue to beat until both ingredients are fully incorporated and the mixture is light and fluffy. Once smooth, gently fold in the thickened pudding mixture until it’s evenly combined, ensuring no streaks remain.
  4. Fold in Cool Whip and Bananas: With a rubber spatula or wooden spoon, carefully fold in the Cool Whip. Its light and airy texture is key to the filling’s overall creaminess. After the Cool Whip is incorporated, gently fold in your chopped banana pieces. Be gentle to avoid mashing the bananas, maintaining their delightful texture.
  5. Chill to Perfection: Cover the bowl tightly with plastic wrap, ensuring the wrap touches the surface of the filling to prevent a skin from forming. Place the bowl in the refrigerator to chill thoroughly while you prepare the cookie base. This chilling time is essential for the filling to firm up and become scoopable.

With your delectable banana cream filling chilling in the fridge, you’re now ready to move on to the next exciting stage: making the glorious cookie base!

Mastering the Graham Cracker Cookie Base

The cookie base is designed to perfectly emulate a graham cracker pie crust – soft, rich, and slightly crumbly. Making these mini “pie crusts” is straightforward when you follow these instructions:

  1. Prepare Your Workspace: Preheat your oven to 350 degrees F (175 degrees C). Line two large baking sheets with parchment paper; this prevents sticking and ensures even baking.
  2. Cream the Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment, or using a large bowl and a hand mixer, beat the softened unsalted butter until it’s light and creamy. Add the softened cream cheese and beat again until well combined and smooth. Next, add both the brown sugar and white sugar to the mixture. Cream these together on medium speed for about 1-2 minutes until the mixture is light, fluffy, and smooth, scraping down the sides of the bowl as needed.
  3. Incorporate Extracts and Eggs: Scrape down the sides of the bowl once more to ensure everything is fully incorporated. Add the vanilla extract, large eggs, and the optional almond extract. Beat on low speed until just combined, being careful not to overmix.
  4. Whisk Dry Ingredients: In a separate medium bowl, whisk together all the dry ingredients: all-purpose flour, cornstarch, baking powder, baking soda, and salt. This step ensures an even distribution of leavening agents and prevents lumps in the dough.
  5. Combine Wet and Dry & Fold in Crust: Gradually add the dry ingredients to the wet ingredients in the stand mixer. Mix on low speed until about half of the flour mixture is just incorporated. Remove the bowl from the stand mixer. Using a wooden spoon or spatula, gently fold in the small chunks of graham cracker crust (or vanilla wafers) into the cookie dough. Continue folding until everything is just incorporated, being careful not to overmix, as this can lead to tough cookies.
  6. Scoop and Shape: Using a large cookie scoop (about 3 tablespoons per cookie), scoop out 8-10 large portions of cookie dough. Roll each portion into a smooth ball.
  7. Add Graham Cracker Coating: Roll each cookie dough ball generously in the crushed graham cracker crumbs (or vanilla wafer crumbs) you prepared. Place 4-5 coated cookie balls onto each prepared baking sheet, ensuring they are spaced adequately apart to allow for spreading.
  8. Chill the Dough (Crucial Step!): Cover the baking sheets loosely with plastic wrap and place them in the refrigerator to chill for at least 30 minutes. This step is vital as it helps prevent the cookies from spreading too much during baking, ensuring they maintain their thick, chewy texture.
  9. Form the “Pie” Indentation: Once chilled, remove one pan of cookie dough balls from the fridge. Using the back of a tablespoon or a small measuring cup, gently press a well into the center of each cookie dough ball. Be careful not to press all the way through the dough – you want to create a perfect little “pie crust” for your filling.
  10. Bake to Golden Perfection: Place the cookies into your preheated oven and bake for 10 minutes. At this point, the cookies will be slightly set. Carefully remove the baking sheet from the oven and, if needed, use the bottom of a small glass or spoon to gently re-indent the centers, deepening the well. Return the cookies to the oven and bake for another 1-2 minutes, or until the edges are golden brown and the centers no longer appear shiny or doughy.
  11. Cool Completely: Remove the cookies from the oven and let them cool completely on the baking sheets or a wire rack. As they cool, you can gently press the centers one last time if necessary to maintain the well shape. Repeat the baking process with your second batch of chilled cookie dough.
  12. Fill and Garnish: Once the cookies have cooled entirely (this is important to prevent the filling from melting), add a generous spoonful or two of the chilled banana cream filling into the center of each cookie well. Top each cookie with a Nilla Wafer for a classic touch and sprinkle a few extra graham cracker crumbs over the top for added texture and visual appeal. While a dollop of whipped cream or Cool Whip is an option, we prefer to keep it simple, allowing the delicious filling and cookie to shine without the extra effort of a pie or cake.

Pro Tips for Banana Cream Pie Cookie Perfection

Achieving bakery-level quality with your homemade banana cream pie cookies is all about a few key techniques and considerations. Here are some expert tips to ensure your cookies turn out perfectly every time:

  • Ingredient Temperature Matters: For the cookie base, ensure your butter and cream cheese are truly softened (but not melted). This allows them to cream together smoothly with the sugars, creating a light, airy base. For the filling, ensure the cream cheese is softened for a lump-free, velvety texture.
  • Do Not Overmix the Dough: Once you add the flour to your wet ingredients, mix only until just combined. Overmixing develops the gluten in the flour, leading to tough, dense cookies rather than the desired soft and chewy texture. When folding in the graham cracker chunks, do so gently.
  • Chilling the Cookie Dough is Essential: While it might be tempting to skip, chilling the cookie dough for at least 30 minutes is a non-negotiable step. This solidifies the fats in the butter and cream cheese, preventing the cookies from spreading too much in the oven. The result is a thicker, chewier cookie with a perfect well for your filling.
  • Achieving the Perfect Well: When pressing the indentation into the cookie dough balls, use the back of a tablespoon or a small measuring cup. Be firm but gentle, creating a defined well without breaking through the bottom. Re-indenting immediately after the first bake helps maintain this shape as the cookie sets.
  • Ripe Bananas for Flavor: For the filling, using slightly ripe bananas (yellow with a few brown spots) ensures maximum natural sweetness and a robust banana flavor. Under-ripe bananas will lack sweetness, while over-ripe bananas might make the filling too mushy.
  • Instant Pudding, Not Cook & Serve: Double-check that you’re using *instant* pudding mix. Cook and serve pudding requires cooking and won’t set up properly in this no-bake filling.
  • Cool the Cookies Completely Before Filling: Patience is a virtue here! If you fill warm cookies, the banana cream filling will melt and become runny, ruining the texture and presentation. Allow the cookies to cool to room temperature before adding the filling.

Creative Variations & Delightful Toppings

While these banana cream pie cookies are absolutely perfect as is, they also serve as a wonderful canvas for culinary creativity. If you’re a purist, enjoy them exactly as the recipe describes. But for those who love to experiment, here are some delightful additions you can either sprinkle on top or gently fold into the banana cream filling to customize your cookies:

  • Diced Strawberries: For a fresh, fruity twist, adding finely diced strawberries to the filling or on top creates a vibrant burst of flavor and color.
  • Mini Chocolate Chips: Who can resist chocolate and banana? Mini chocolate chips (milk, dark, or white) stirred into the filling or sprinkled on top add a delightful textural contrast and rich flavor.
  • Peanut Butter Chips: Elevate the classic banana and peanut butter combination by adding peanut butter chips to the filling.
  • Chocolate Shavings: For an elegant touch, garnish your finished cookies with delicate chocolate shavings.
  • White Chocolate Chips: White chocolate pairs wonderfully with banana and graham cracker flavors, offering a creamy, sweet addition.
  • Toasted Coconut Flakes: For a tropical flair, lightly toast some coconut flakes and sprinkle them over the filling.
  • Caramel Drizzle: A thin drizzle of caramel sauce over the finished cookies would add another layer of rich sweetness.
  • Chopped Nuts: A sprinkle of finely chopped pecans or walnuts could add an extra layer of crunch and nutty flavor.

Storage and Freshness: Keeping Your Cookies Delicious

Proper storage is key to enjoying your banana cream pie cookies at their best. Due to the creamy filling, these cookies are best enjoyed fresh, but here are some tips for making ahead and storing any leftovers:

  • Store Components Separately for Best Results: If you’re planning to make these ahead, it’s highly recommended to prepare the cookie base and the banana cream filling a day in advance, storing them separately. The baked cookies can be kept in an airtight container at room temperature for up to 2-3 days. The banana cream filling should be stored in an airtight container in the refrigerator.
  • Assemble Just Before Serving: For the freshest taste and texture, assemble the cookies by adding the filling and garnishes just before you plan to serve them. This prevents the cookie base from becoming soggy from the moist filling.
  • Assembled Cookies Storage: Once the cookies have been assembled with the filling, they won’t store exceptionally well for extended periods. The moisture from the cream filling will start to soften the cookie base, making it quite soggy over time. If you do have leftovers, store them in a single layer in an airtight container in the refrigerator. They will keep for just 1-2 days, but the texture of the cookie base will likely be softer than freshly assembled ones.
  • Freezing is Not Recommended: Due to the delicate nature of the cream filling and the potential for the bananas to brown or become mushy when thawed, freezing these assembled cookies is not recommended.

Enjoy these delightful cookies while they are fresh and vibrant for the optimal taste experience!

Instructions

Banana Filling

  1. Chop the bananas into 1/2″ pieces and set aside. (Uses: 3 Bananas)
  2. Whisk the milk and pudding together until combined then allow to sit until slightly thickened, for about 2-3 minutes. (Uses: 1/2 Cup Whole Milk, 1/2 Package Instant French Vanilla Pudding Mix)
  3. Beat the softened cream cheese until smooth using a hand mixer then add the sweetened condensed milk and beat again. Stir in the thickened pudding mixture. (Uses: 6 ounces Cream Cheese, 1/2 Cup Sweetened Condensed Milk)
  4. Fold in the whipped topping (Cool Whip holds up better than fresh whipped cream, but you can do either), then gently fold in the chopped bananas, cover in saran wrap, and place in the fridge to chill while you make the cookies. (Uses: 4 oz Cool Whip)

Cookie Base

  1. Preheat oven to 350 degrees F and line 2 baking sheets with parchment.
  2. Cream the butter until smooth then add in the cream cheese and cream again. (Uses: 1 Cup Unsalted Butter, 4 Tablespoons Cream Cheese)
  3. Add in sugars and beat until smooth, about 1 minute. (Uses: 1 Cup Brown Sugar, 2/3 Cup White Sugar)

(Uses: 1 Cup Graham Cracker Crust)
  8. Make a well using a tablespoon in the center of each ball.
  9. Bake 10 minutes.
  10. Remove from oven and immediately press using a small glass or measuring cup to indent the center for the filling one more time.

  12. Set aside to cool completely, pressing with the glass a final time if needed.
  13. Once everything is cool, add the filling, top with a little Nilla Wafer. (Uses: Nilla Wafers)
