Yet, achieving that ideal balance of tender potatoes, luscious sauce, and a golden-brown top can sometimes feel like a culinary challenge. We’ve all been there: potatoes that are too mushy, a sauce that separates, or a bake that’s stubbornly undercooked in the center. America's Test Kitchen Cookbook: Unlock Your Culinary Potential with Fail-Proof Recipes

Scalloped potatoes and au gratin potatoes were frequent features on our family dinner table throughout my childhood. The aroma of baking potatoes mingled with savory cheese and cream is a scent that instantly transports me back to those warm, comforting memories. However, my own attempts at recreating these dishes in my college days were often less successful. More often than not, I’d pull a seemingly beautiful casserole from the oven, only to find the potatoes inside still stubbornly firm, refusing to yield to my fork. The frustration was real, and it taught me a valuable lesson: great cooking isn’t just about ingredients; it’s about understanding the process.

Delicious Scalloped Potatoes: A Must-Try Recipe for Your Next Dinner

Are Potatoes Healthy? Debunking Common Myths

Potatoes often get a bad rap in the health world, but the truth is, they are incredibly nutritious on their own. A medium, unsalted plain baked potato with its skin contains only about 160 calories and is naturally free of fat and cholesterol. What’s more, potatoes are packed with essential vitamins and minerals, including significant amounts of vitamin B6, vitamin C, and iron. They are also an excellent source of potassium, which is crucial for maintaining healthy blood pressure and fluid balance.

The “unhealthy” reputation of potatoes often stems from what we add to them. Piling on excessive butter, sour cream, cheese, and other high-fat, high-sodium toppings can certainly increase the calorie and fat content. However, when prepared simply or with wholesome additions, potatoes are a fantastic component of a balanced diet.

Can You Use Red Potatoes Instead of Russets for Scalloped Potatoes?

While russet potatoes are traditionally favored for their starchy texture that helps create a creamy sauce and tender slices, scalloped potatoes can indeed be made with other varieties, including lower-starch red potatoes. The choice of potato will influence the final texture of your dish.

Red potatoes, with their waxy texture, tend to hold their shape better when cooked and will result in a firmer scalloped potato dish. If you prefer a more defined potato slice with a slightly firmer bite, red potatoes are an excellent choice. Russets, on the other hand, will break down more readily, contributing to an ultra-creamy, almost melt-in-your-mouth consistency. For this particular recipe from America’s Test Kitchen, russets are recommended for their superior ability to absorb the rich sauce and deliver that classic, tender scalloped potato experience.

Can Scalloped Potatoes Be Made Ahead? Essential Make-Ahead Tips

One of the best aspects of classic comfort food like scalloped potatoes is the ability to prepare them in advance, making meal planning and entertaining significantly easier. You can absolutely prepare scalloped potatoes up to the point of baking and then store them in the refrigerator.

To make them ahead, assemble the dish as directed in the recipe, but do not bake it. Cover the baking dish tightly with plastic wrap or aluminum foil and refrigerate for up to 2 days. When you’re ready to bake, remove the dish from the refrigerator and let it sit at room temperature for about 30 minutes to an hour to take the chill off. You may need to add an extra 10-15 minutes to the baking time to ensure it heats through completely and achieves that beautiful golden crust. This make-ahead capability makes scalloped potatoes a perfect choice for holiday meals or busy weeknights when you want a delicious homemade side without last-minute fuss.

This scalloped potatoes recipe is incredibly delicious and, best of all, completely fail-proof thanks to America’s Test Kitchen!

Ingredients

  • 2 Tablespoons unsalted Butter
  • 1 Onion, chopped fine
  • 1 Tablespoon Fresh Thyme, minced
  • 2 Cloves Garlic, minced
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 2 1/2 Pounds Russet Potatoes, peeled and sliced 1/8″ thick
  • 1 Cup Chicken Broth
  • 1 Cup Heavy Cream
  • 2 Bay Leaves
  • 1 Cup Cheddar Cheese, garlic flavor (or your preferred cheddar/gruyere)

Instructions

  • Adjust the oven rack to the middle position and preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • In a Dutch oven or a large, heavy-bottomed pot, melt the 2 tablespoons of unsalted butter over medium-high heat until shimmering.
  • Add the finely chopped onion to the pot and cook, stirring occasionally, until it becomes soft and lightly browned, which should take approximately 4 minutes.
  • Stir in the fresh minced thyme, minced garlic, salt, and pepper. Continue to cook for another 30 to 60 seconds, allowing the aromatics to become fragrant.
  • Add the thinly sliced russet potatoes, chicken broth, heavy cream, and the 2 bay leaves to the pot.
  • Bring the mixture to a gentle simmer. Once simmering, cover the pot and reduce the heat to medium-low.
  • Simmer the potatoes until they are almost tender but still hold their shape, typically about 10 minutes. They will finish cooking in the oven.
  • Carefully remove and discard the bay leaves from the potato mixture.
  • Transfer the potatoes and their creamy sauce to an 8-inch baking pan. Press the potatoes gently into an even layer using the back of a spoon or spatula.
  • Evenly sprinkle the 1 cup of cheddar cheese over the top of the potatoes.
  • Bake for approximately 15-20 minutes, or until the cheese is melted, bubbly, and a beautiful golden brown on top.
  • Allow the scalloped potatoes to cool for 10 minutes before serving. This resting period helps the sauce set and prevents it from being too runny.

Recipe Notes

Feel free to experiment with your favorite cheese variety, but sticking to a sharp cheddar, Gruyère, or a blend will yield the best depth of flavor and melt.

You can prepare scalloped potatoes up to the point of baking, and then store the unbaked casserole in the refrigerator, tightly covered.

When making ahead, scalloped potatoes can be stored in the refrigerator for up to 2 days before baking. Remember to let it come to room temperature for 30-60 minutes before baking and adjust baking time as needed.
