We were determined to recreate that magic at home, and after much delicious experimentation, we’ve cracked the code. It all starts with our tried-and-true best French toast recipe, then we simply add a luscious, simple cream cheese filling. The result is a dish that tastes incredibly sophisticated, yet is remarkably straightforward to prepare, much like our melt-in-your-mouth buttermilk pancakes.

The Essential Ingredients for Stuffed French Toast

Crafting this unforgettable breakfast requires a handful of high-quality ingredients, each playing a crucial role in achieving that perfect balance of textures and flavors. While precise measurements are detailed in the recipe card below, here’s a closer look at what you’ll need and why:

  • Bread: The foundation of any great French toast. We highly recommend rich, buttery brioche or fluffy challah. These breads soak up the custard beautifully without falling apart, providing a tender texture. More on bread choices below!
  • Eggs: The core of our French toast custard, binding the flavors and creating that signature golden crust.
  • Milk: Adds creaminess and helps tenderize the bread. Whole milk or even a plant-based alternative works well.
  • Vanilla Extract: A non-negotiable for both the French toast batter and the cream cheese filling, it infuses a delightful aromatic sweetness.
  • Cinnamon & Nutmeg: These warm spices are classic companions to French toast, adding depth and a cozy aroma.
  • Sugar (Granulated & Powdered): Granulated sugar for the batter provides subtle sweetness and aids in browning, while powdered sugar is key for achieving a smooth, lump-free sweet cream cheese filling.
  • Flour & Salt: A tiny bit of flour in the batter helps create a slightly crispier exterior, and salt balances the sweetness, enhancing all other flavors.
  • Butter: Essential for cooking the French toast to a perfect golden crisp on the griddle and adding a rich, indulgent flavor.
  • Cream Cheese: The star of our stuffing! Ensure it’s softened to room temperature for a perfectly smooth, creamy filling that spreads effortlessly and mixes without clumps.
  • Banana: Ripe bananas add natural sweetness and a lovely soft texture to the cream cheese filling, complementing the overall richness.
  • Berry Sauce: A vibrant triple berry sauce provides a beautiful tart contrast to the sweet French toast, elevating it to a truly gourmet level. You can use any berries you prefer.
  • Buttermilk Syrup: Often hailed as “liquid gold” or “heaven’s nectar,” our buttermilk syrup is the ultimate topping, adding unparalleled richness and a tangy sweetness that’s simply irresistible.

Crafting Your Gourmet Stuffed French Toast: A Step-by-Step Guide

Making this impressive dish is simpler than you might think. Follow these easy steps to bring a taste of gourmet brunch to your home:

  1. Prepare Your Griddle: Begin by heating a nonstick griddle or a large skillet over medium heat. This ensures even cooking and that beautiful golden crust. You’ll also want to preheat your oven to a low temperature (around 200°F or 90°C) with a baking sheet inside. This will keep your finished French toast warm as you cook subsequent batches.
  2. Whip Up the Berry Sauce: While the griddle heats, prepare your berry sauce. A quick simmer of fresh or frozen berries with a touch of sugar and lemon juice creates a vibrant, flavorful topping. Set it aside to cool slightly.
  3. Mix the French Toast Batter: In a shallow dish or pie plate, whisk together eggs, milk, vanilla extract, granulated sugar, cinnamon, nutmeg, flour, and salt until smooth. This is your luscious custard bath for the bread.
  4. Create the Sweet Cream Cheese Filling: In a separate bowl, beat the softened cream cheese with powdered sugar until light and fluffy. Stir in the vanilla extract. Gently fold in the sliced bananas. This sweet and tangy mixture is the heart of your stuffed French toast.
  5. Assemble the Stuffed French Toast: Take a slice of your chosen bread and spread a generous layer of the cream cheese filling over one side. Top with another slice of bread, creating a “sandwich.” Carefully dip each side of this stuffed bread sandwich into the prepared French toast batter, allowing it to soak just long enough to absorb the liquid without becoming soggy.
  6. Cook to Golden Perfection: Melt a pat of butter on your hot griddle. Place the battered stuffed French toast onto the griddle, ensuring not to overcrowd it. Cook for 3-4 minutes per side, or until each side is beautifully golden brown and cooked through.
  7. Keep Warm and Prepare Syrup: As each piece cooks, transfer it to the warmed baking sheet in the oven to keep it hot while you finish the rest. Meanwhile, if you’re making buttermilk syrup from scratch, start preparing it so it’s warm and ready to serve.
  8. Serve and Enjoy: Once all your stuffed French toast is cooked, stack it high on plates. Drizzle generously with your warm berry sauce and that heavenly buttermilk syrup. A sprinkle of powdered sugar or a dollop of whipped cream adds the perfect finishing touch!

Serving Suggestions for Your Stuffed French Toast

This sweet and satisfying dish can be enjoyed in many ways. While it’s utterly delicious on its own, a few thoughtful additions can make it even more special:

  • Classic Sweet Toppings:
    • Whipped Cream & Powdered Sugar: A dollop of stabilized whipped cream and a dusting of powdered sugar add a delicate finish and extra creaminess.
    • Fresh Berries: Beyond the berry sauce, a handful of fresh strawberries, blueberries, or raspberries adds vibrant color and a burst of fresh flavor.
    • Maple Syrup: A classic for a reason! A good quality maple syrup is always a welcome addition.
  • Crunchy Additions:
    • Chopped Nuts: Toasted pecans or walnuts sprinkled over the top provide a delightful crunch and nutty flavor that complements the sweet filling.
    • Granola: A sprinkle of your favorite granola can add texture and extra flavor.
  • Savory Pairings:

Because this dish is wonderfully sweet and indulgent, we love to balance it with something savory for a complete brunch experience. Consider serving it alongside:

    • Crispy Bacon: Salty, smoky bacon is a perfect contrast.
    • Sausage: Breakfast sausage links or patties offer a savory, meaty counterpoint.
    • Fluffy Scrambled Eggs: Simple scrambled eggs provide a protein boost and a neutral canvas to complement the sweetness.
    • Golden Hash Browns: Crispy hash browns are another fantastic savory side that everyone loves.

Creative Variations for Your Stuffed French Toast

While our triple berry sauce and sweet cream cheese filling are undeniably delicious, the beauty of stuffed French toast lies in its versatility. The possibilities are endless, allowing you to customize it to your personal preferences or seasonal ingredients. Here are a few inspiring ideas to get your creative juices flowing:

  • Fruitful Fillings & Toppings:
    • Other Fruit Sauces/Syrups: Instead of berries, try making a sauce or syrup with peaches, cherries, plums, or apples. A warm spiced apple compote, for example, would be divine in the fall.
    • Fruit in the Filling: Mix finely diced fresh fruit directly into the cream cheese filling. Think strawberries, raspberries, blueberries, or even a hint of grated citrus zest for brightness.
  • Nutty Enhancements:
    • Toasted Nuts: Sprinkle chopped almonds, walnuts, or pecans on top for added texture and a rich, earthy flavor. Toasting them beforehand will enhance their aroma and crunch.
    • Nuts in the Filling: For an extra layer of flavor and texture, fold some finely chopped toasted nuts into your cream cheese filling.
  • Decadent Stuffings:
    • Chocolate Hazelnut Spread: For a truly indulgent treat, swap the cream cheese for Nutella or another chocolate hazelnut spread.
    • Nut Butters: Peanut butter, almond butter, or cashew butter can be used as a luscious, protein-packed filling. You could even mix it with a touch of honey or maple syrup.
    • Flavored Cream Cheese: Experiment with flavored cream cheeses. A pumpkin spice cream cheese for autumn, or a lemon zest cream cheese for a brighter, spring-like flavor, could be fantastic.
  • Exciting Toppings:
    • Chocolate Chips: A sprinkle of mini chocolate chips, either milk, dark, or white, adds a delightful burst of chocolatey goodness.
    • Toffee Bits: For a crunchy, buttery, and sweet topping, toffee bits are a fantastic choice.
    • Caramel Sauce: A drizzle of warm caramel sauce elevates the dish to dessert-like decadence.
    • Coconut Flakes: Toasted coconut flakes can add an exotic, tropical touch.

Choosing the Best Bread for French Toast

The secret to exceptional French toast lies largely in the bread. You need a sturdy, somewhat dense loaf that can eagerly soak up the rich egg custard without completely disintegrating. Our top recommendations for stuffed French toast are:

  • Brioche: This rich, buttery, and slightly sweet bread is arguably the king of French toast. Its tender crumb and luxurious flavor make for an incredibly indulgent result.
  • Challah: A traditional Jewish egg bread, challah is similar to brioche in its richness and slightly sweet profile. It has a beautiful, airy yet resilient texture that holds up perfectly to soaking and cooking. If you’re in Utah, you might be lucky enough to find artisan challah from places like Challah Back Dough (Fridays only at Salt Bistro inside The Leonardo, 209 E. 500 S. SLC, UT. 84111, 2-7 pm). Otherwise, a good bakery challah is always a winner.

If brioche or challah aren’t readily available, don’t fret! Other excellent alternatives include:

  • French Bread: A good quality French baguette or loaf, especially one that’s a day or two old, works wonderfully. Its slightly chewy texture provides a nice contrast to the soft interior.
  • Texas Toast: These thick-cut slices of bread are designed to absorb liquids, making them a convenient and effective choice for French toast.

Whichever bread you choose, slightly stale bread (a day or two old) is often preferred as it absorbs the custard more effectively than fresh bread, preventing a soggy outcome.

How to Store and Reheat Stuffed French Toast

If you’re lucky enough to have leftovers (a rare occurrence with this recipe!), storing and reheating your stuffed French toast is easy, allowing you to enjoy a quick, delicious breakfast even on busy weekdays.

  • Storage: Allow any leftover French toast to cool completely. Store them in an airtight container in the refrigerator for up to 3-4 days.
  • Reheating for Best Results:
    • Toaster or Toaster Oven: For a deliciously crispy exterior, pop individual slices into a toaster or toaster oven. This method works just like reheating a piece of regular toast, yielding a wonderfully crisp outside.
    • Oven: To reheat a larger batch, arrange the French toast in a single layer on a baking sheet. Warm them in a preheated oven at 300°F (150°C) for about 5-7 minutes, or until heated through and slightly crispy.
    • Microwave: While convenient, microwaving will result in a softer French toast without the crispy edges. Zap individual slices for about a minute or until warm. This is best if you prioritize speed over crispness.
