  • 1 Box Lemon Pudding, Small Package Instant
  • 1/2 teaspoon Lemon Extract
  • Yellow Food Color Gel (as desired)
  • 1 Cup Whipping Cream, Heavy *see note
  • 2 Cups Powdered Sugar, divided
  • Blackberries, Strawberries (chopped), raspberries, and/or blueberries (for topping)

Instructions

  1. Preheat the oven to 350 degrees F (175 C).
  2. Grease a muffin tin, or a mini muffin tin, to ensure easy removal.
  3. Press a scoop of sugar cookie dough into the bottom of each muffin cup. There’s no need to press it up the sides, as it will naturally expand during baking. *See Note.
  4. Bake for 10-15 minutes, depending on the size of your muffin wells. Once the dough starts to turn golden, especially around the edges, and the tops no longer look wet, remove from the oven and gently place the tin on the counter to cool slightly.
  5. While still warm, use a tart shaper, the end of a rolling pin, or the back of a spoon to gently press down in the center of each cookie, creating a well.
  6. Meanwhile, prepare the filling: Using a hand mixer, beat the softened cream cheese until it is smooth and creamy.
  7. Add the instant lemon pudding mix to the cream cheese and beat again until well combined.
