Ultimate French Dip Sliders

French Dip Sliders offer a delightful fusion of classic flavors in a conveniently sized package, making them an ideal choice for a bustling weeknight dinner, a festive game day spread, or an irresistible appetizer for any gathering. These miniature sandwiches are celebrated for their rich, buttery appeal, perfectly complemented by sweet, caramelized onions and a deeply savory au jus for dipping. They embody comfort food at its finest, transforming simple ingredients into a truly memorable culinary experience.

While French dip sandwiches weren’t a staple of my childhood, I distinctly recall those busy, chilly evenings when my mom, with weary hands, would quickly assemble them for our hungry family. With just thinly sliced roast beef, soft hoagie rolls, and a pot of aromatic au jus, she managed to bring a comforting and satisfying meal to the table for five eager children. It was a simple solution that always hit the spot.

Our blog already features a beloved classic French dip recipe, which consistently receives rave reviews. However, inspired by the immense popularity of our ham and cheese sliders, I’ve been eager to craft a new sliders recipe that captures that same miniature magic. And let me tell you, these French Dip Sliders have exceeded all expectations. They are, without a doubt, one of the most remarkable creations I’ve prepared in months—so good, they might just make you forget about those ham ones entirely!

Why Are Sliders the Perfect Choice?

You might wonder why sliders have become such a culinary sensation, and the answer is multi-faceted. Far from needing justification, these mini sandwiches are a true win-win for both cooks and eaters. Sandwiches, in general, are already a marvel – a complete meal neatly packed into one delicious serving. Sliders take this concept and elevate it, offering all the delightful elements of a full-sized sandwich in a charmingly petite form. This miniaturization comes with a host of benefits:

  • Portion Control and Guilt-Free Indulgence: Sliders are small enough that you can enjoy more than one without feeling overly full or guilty. They’re perfect for satisfying cravings without overdoing it.
  • Optimal Bread-to-Filling Ratio: Often, with larger sandwiches, the bread can overpower the fillings. Sliders, by design, boast an incredibly satisfying ratio, ensuring every bite delivers a harmonious blend of flavors and textures.
  • Versatility for Any Meal or Gathering: They are incredibly flexible. Serve them as a hearty, quick dinner on a busy weeknight, an impressive appetizer for a party, or a crowd-pleasing option for game day. Their small size makes them easy to handle and perfect for mingling.
  • Kid-Friendly Appeal: The mini format is often a hit with children, making them more likely to try and enjoy their meal.
  • Effortless Entertaining: Preparing a batch of sliders is often simpler than crafting individual large sandwiches. They bake together in one pan, simplifying both cooking and serving for larger groups.

It’s simply an all-around winning proposition, combining convenience, deliciousness, and broad appeal into one perfect bite.

Crafting Your Own French Dip Sliders: A Step-by-Step Guide

These incredible French Dip Sliders are surprisingly straightforward to assemble, coming together in three distinct and delicious stages: the luscious caramelized onions, the artful construction of the sandwiches, and the irresistible au jus. Before you begin, preheat your oven to a welcoming 350 degrees Fahrenheit (175 degrees Celsius) and lightly grease a 9×13-inch baking pan. This ensures your sliders achieve that perfect golden crust without sticking.

The Foundation: Perfectly Caramelized Onions

Let’s kick things off with the caramelized onions, as they require a little patience but contribute immensely to the depth of flavor in these sliders. Thinly slice one medium yellow onion. In a large sauté pan, melt two tablespoons of butter over medium heat. Add the sliced onions to the pan along with two sprigs of fresh thyme and a teaspoon of water – the water helps prevent burning and aids in the caramelization process. Stir the onions occasionally, seasoning them lightly with kosher salt and freshly ground black pepper. As they cook, the onions will gradually soften and transform into a beautiful golden hue, sweetening significantly. This slow process, typically taking about 20-25 minutes, is crucial for developing their rich, sweet, and savory notes. Once tender and deeply golden, remove them from the heat and set aside.

Now, it’s time for the fun part: building your sliders! This process is wonderfully simple and quick. Begin by carefully slicing your entire sheet of rolls in half horizontally, ensuring you have a top and bottom layer. Place the bottom halves of the rolls side-by-side in your greased 9×13-inch baking pan, cut-side facing up, creating an even foundation for your sandwiches. This method allows you to assemble all the sliders at once, saving time and effort.

Next, lavishly spread a generous layer of stone ground Dijon mustard onto the cut surface of each bottom roll. While other types of mustard can be used, we highly recommend stone ground Dijon for its unparalleled flavor profile and delightful texture. Its slightly coarse consistency and sharp, tangy notes provide a perfect counterpoint to the richness of the roast beef and cheese, adding an essential layer of complexity to the sliders.

Following the mustard, add a generous layer of thinly sliced roast beef. For the best results, we suggest a trip to your local deli counter; ask for about half a pound of their finest, freshly sliced roast beef. The quality of the meat truly shines in this recipe. Arrange the roast beef evenly over the mustard-coated buns, ensuring every slider gets a substantial portion.

Now comes the glorious cheese layer! We absolutely adore these sliders with provolone cheese. When you’re at the deli getting your roast beef, pick up 9 to 12 slices of provolone. Don’t be shy with the cheese; a generous amount ensures a gooey, melty delight. Carefully place a single layer of provolone slices over the roast beef, ensuring good coverage.

With the cheese in place, retrieve those wonderfully caramelized onions you prepared earlier. Distribute them evenly over the provolone layer, ensuring each slider receives a delightful spoonful. Finally, gently place the top halves of the rolls over the assembled fillings, completing your mini sandwiches.

To achieve that signature golden, buttery crust, prepare a delicious topping. Melt most of your remaining butter, then stir in a teaspoon of Worcestershire sauce and a teaspoon of toasted sesame seeds. This mixture adds depth and a lovely nutty crunch. Brush this melted butter mixture generously over the tops of the assembled buns. Cover the baking dish tightly with aluminum foil and bake for 20-30 minutes, or until the sliders are golden brown and the cheese is beautifully melted and bubbly. Once baked to perfection, remove the foil and, for a fresh pop of color and flavor, sprinkle with freshly chopped parsley before serving.

The Essential Dipping Companion: Luscious Au Jus

While your sliders are baking to golden perfection, dedicate your attention to creating the glorious au jus – the heart and soul of any truly authentic French Dip experience. This savory dipping sauce is so rich and flavorful, you might be tempted to drink it (though we’d suggest sticking to dunking your sliders!).

In a skillet, melt the last tablespoon of butter over medium heat. Add one minced garlic clove and cook briefly until fragrant, about 30 seconds to a minute. Pour in one cup of low-sodium beef broth, one tablespoon of Worcestershire sauce, and the remaining two sprigs of fresh thyme (stripped from their stems). Bring the mixture to a gentle simmer on the stove and let it cook for about 10 minutes, allowing it to reduce slightly and thicken into a deeply flavorful, aromatic broth. The reduction concentrates the flavors, creating a truly luxurious dipping sauce.

Once the sliders are out of the oven, slice them into individual portions and serve immediately with small, individual cups of the warm, savory au jus on the side. The combination of the hot, cheesy roast beef sliders and the rich dipping sauce is absolutely mouth-watering!

Perfect Pairings: What to Serve with French Dip Sliders?

Whether you’re presenting your French Dip Sliders as a delightful appetizer or the main event of your meal, they pair wonderfully with a variety of side dishes. The rich, savory nature of the sliders allows for great flexibility in accompanying flavors and textures.

If you’re serving them as an appetizer, consider a spread of complementary bites. Head to our collection of easy appetizers for inspiration! A good balance of sweet and savory treats always works well, perhaps some fresh fruit skewers or a light bruschetta to contrast the hearty sliders.

For a full meal, French Dip Sliders are incredibly versatile and can be enjoyed with an array of different sides. We particularly love them alongside herb and garlic roasted potatoes, whose crispy exteriors and fluffy interiors make for a satisfying complement. A vibrant side of roasted garlic veggies, such as broccoli, carrots, or bell peppers, adds essential freshness and nutrients. For a heartier, classic comfort food pairing, a serving of delicious baked beans is always a hit. To cut through the richness and provide a refreshing element, a fresh fruit salad with a zesty lemon dressing makes an excellent choice. Don’t feel limited, though; you could easily pair them with a crisp green salad, coleslaw, or even a simple bag of your favorite potato chips. Why Do They Call Sliders “Sliders”?

There are many theories regarding the origin of the term “sliders.” Most culinary historians agree that the name likely emerged in the 1940s, primarily within the U.S. Navy. It was used to describe miniature hamburgers that were so small and often greasy, they would just slide right down when eaten. Over time, the term “sliders” expanded beyond mini burgers to encompass all sorts of small, easily consumed sandwiches.

What Is A Good Cut Of Beef For Roast Beef?

For making roast beef that is perfect for slicing thin for sandwiches, a top loin roast is generally considered one of the best cuts. It offers a good balance of tenderness and flavor, making it ideal for deli-style slices.

Can You Substitute A White Onion For a Yellow Onion?

Absolutely, especially if you have a strong preference for onion flavor. White onions tend to have a sharper, more pungent taste compared to yellow onions. While they will caramelize beautifully, the resulting flavor in your sliders will be a bit more assertive, which some people prefer.

What Can You Substitute For Stone Ground Mustard?

If you don’t have stone ground mustard, a classic Dijon mustard or even a spicy brown mustard can be used as a substitute. While we highly recommend stone ground for its unique flavor and added texture, these alternatives will still provide a delicious tangy kick to your sliders.

What Type of Bread Should Be Used for Sliders?

Any small roll or bun will work perfectly for sliders. Many grocery stores now carry “slider-sized” hamburger buns, which are ideal. However, Hawaiian sweet rolls are a perennial favorite for sliders due to their soft texture and subtle sweetness that beautifully complements savory fillings. Dinner rolls or even small potato rolls are also excellent choices.

  • 4 Sprigs Thyme, fresh, divided
  • 1 teaspoon Water
  • Kosher Salt, to taste
  • Black Pepper, freshly ground, to taste
  • 3 Tablespoon Dijon mustard, Stone Ground
  • 1/2 Pound Deli Roast Beef, thinly sliced
  • 9-12 Slices Provolone Cheese
  • 1 teaspoon Worcestershire Sauce (for topping)
  • 2 Tablespoons Mayonnaise (for topping)
  • 1 teaspoon Dijon Mustard (for topping)
  • 1 teaspoon Toasted Sesame Seeds
  • 1 Tablespoon Parsley, freshly chopped (for garnish)

For the Au Jus

  • 1 Clove Garlic, minced
  • 1 Cup Beef Broth, low sodium
  • 1 Tablespoon Worcestershire Sauce

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9″-x-13″ baking sheet with cooking spray. Place the bottom halves of the 12 rolls in the bottom of the pan, cut-side up.

To Caramelize Onions

  • In a large skillet over medium heat, melt 2 tablespoons of butter (from the 1/2 cup divided). Add the thinly sliced yellow onion and 2 sprigs fresh thyme, along with 1 teaspoon of water. Season with kosher salt and freshly ground black pepper.
  • Cook, stirring occasionally, until the onions begin to soften and turn slightly golden. Continue cooking, stirring occasionally, until onions are deeply caramelized and sweet, about 20 to 25 minutes. Remove from heat and set aside.

For The Sandwiches

  • Spread an even layer of stone ground Dijon mustard onto the cut surface of the bottom rolls. Top with a generous layer of thinly sliced deli roast beef, followed by 9-12 slices of provolone cheese. Evenly distribute the caramelized onions over the cheese. Cover with the top halves of the rolls.
  • Melt all but one tablespoon of the remaining butter. In a small bowl, mix the melted butter with 1 teaspoon Worcestershire sauce, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1 teaspoon toasted sesame seeds. Brush this mixture generously over the tops of the buns. Cover the baking dish with foil. Bake until golden brown and cooked through, about 20-30 minutes. Sprinkle with 1 tablespoon freshly chopped parsley after baking.

To make the Au Jus

  • Meanwhile, melt the remaining 1 tablespoon butter in a medium skillet over medium heat. Stir in 1 minced garlic clove and cook until fragrant (about 30 seconds). Add 1 cup beef broth, 1 tablespoon Worcestershire sauce, and the remaining 2 sprigs of fresh thyme (stripped from the stem). Season with salt and pepper to taste. Simmer for 10 minutes until the au jus reduces slightly and thickens. Serve the sliders with small cups of au jus on the side for dipping.

Recipe Notes

To toast sesame seeds, place them in a dry pan over medium heat, stirring often until they turn golden brown and fragrant.

To reheat French Dip Sliders, place them on a baking sheet, cover with foil, and warm in a 350°F (175°C) oven for about 12 minutes, or until heated through and cheese is re-melted.
