Smash Burgers Recipe
Smash Burgers
Servings: 4 burgers • Prep: 5 mins • Cook: 15 mins • Total: 20 mins
Ingredients
- 1 pound ground beef blend (60% chuck, 40% brisket or sirloin)
- 1 tablespoon canola oil
- 2 tablespoons unsalted butter, softened
- 4 potato burger buns
- Salt and freshly ground black pepper
- American cheese slices
- Burger sauce (store-bought or homemade)
- Lettuce, pickles, and chopped white onion for topping
Instructions
- Divide the ground beef into four loose 2″ balls (about 1/4 pound each). Chill briefly on a plate in the freezer so they hold their shape.
- Heat a 12-inch cast iron skillet over medium and brush with canola oil until shimmering.
- Add the butter and toast the cut sides of the buns in the skillet until golden. Remove and set aside.
- Season the chilled beef balls generously with salt and pepper. Place each ball in the hot skillet and press firmly with a spatula to flatten into thin patties (the “smash”).
- Cook until a deep caramelized crust forms, about 1 minute. Flip, immediately add a slice of American cheese, and cover with a lid for 30 seconds to melt. If you prefer a more well-done patty, cook an additional minute before adding the cheese.
- Spread burger sauce on the bottom bun, add lettuce, 1–2 patties per bun, then top with pickles and chopped white onion. Serve immediately.
Notes
Use a well-seasoned cast iron skillet and work in batches if needed to avoid overcrowding; smashing creates the best crust and flavor. Adjust salt and pepper to taste and serve with classic sides like fries, coleslaw, or a crisp pasta salad.
