Succulent Beef Ribs with Charred Pepper Cream Gnocchi

Unlock a world of exquisite flavors with a dish that promises to redefine your culinary experience: Braised Beef Short Ribs with Charred Pepper Cream Gnocchi. This isn’t just another gnocchi recipe; it’s a testament to slow-cooked perfection meeting vibrant, creamy indulgence. Imagine succulent, melt-in-your-mouth beef short ribs, gently braised to tenderness, paired with light, pillowy gnocchi enrobed in a rich, smoky charred pepper cream sauce. This combination creates a symphony of textures and tastes that is truly unforgettable.

The inspiration for this magnificent dish stems from a truly exceptional culinary journey, where the sheer quality and exquisite preparation of beef left an indelible mark. It was during a memorable trip to Kentucky, hosted by “Beef, It’s What’s for Dinner,” that the idea for this recipe began to simmer. We savored an array of impeccably cooked beef dishes, each more incredible than the last. But one dish, in particular, captured the imagination: a delectable gnocchi served with boneless beef ribs. The harmony of flavors was so profound that it sparked an immediate desire to recreate that magic in our own kitchen.

That initial taste revealed a ricotta gnocchi bathed in a brilliant pepper cream sauce. The moment it hit the palate, it evoked fond memories of our popular Roasted Red Pepper Pasta, cementing the urgent need to develop a new recipe that captured its essence. While our blog already features beloved recipes like 10 Minute Brown Butter Sage Gnocchi and our classic Ricotta Gnocchi, this particular combination of braised beef and a unique pepper cream sauce demanded its own spotlight, promising to be a standout addition to our collection of comforting, gourmet meals.

Understanding Gnocchi: Potato, Pasta, or Dumpling?

The question of whether gnocchi is a potato or a pasta is a delightful culinary debate, but ultimately, its deliciousness is what truly matters. For those curious about its classification, gnocchi holds a unique place in Italian cuisine. Technically, it is often categorized as a type of Italian pasta. However, its most common preparation, utilizing potatoes as the primary ingredient, leads many to also consider it a dumpling. This duality makes gnocchi a fascinating culinary creation: it’s both a tender potato dumpling and a versatile pasta, offering a satisfying chew and comforting texture. For us, its tender, yielding consistency often brings to mind the heartiness of a dumpling, making it the perfect vehicle for rich sauces and robust meats.

While various types of gnocchi exist, from semolina to ricotta-based versions, this particular recipe truly shines when made with potato gnocchi. Its inherent mild flavor and soft texture provide an ideal counterpoint to the intensely savory braised beef and the vibrant, complex charred pepper cream sauce. Whether you choose to make your gnocchi from scratch or opt for a high-quality store-bought variety, focusing on potato gnocchi will ensure the best possible outcome for this decadent dish.

Gnocchi vs. Pasta: A Nutritional Look

When comparing gnocchi and traditional pasta from a nutritional standpoint, it’s not a straightforward “healthier” or “less healthy” answer; each offers unique benefits and considerations. Gnocchi, particularly potato-based varieties, often contains nutrients like potassium, which is generally not found in significant amounts in typical wheat pasta. This can be an advantage for those looking to increase their potassium intake.

However, gnocchi can also be quite calorie-dense due to its composition and common preparations, which often include butter or cream-based sauces. On the other hand, traditional pasta generally offers more protein, especially whole wheat varieties, which is beneficial for muscle repair and satiety. Pasta is also typically higher in carbohydrates, which can be a consideration for those managing their carb intake. Ultimately, the choice between gnocchi and pasta largely depends on your specific dietary goals, nutritional needs, and the overall balance of your meal. For this particular recipe, the rich flavors and comforting textures are the star, making it a delicious indulgence to be enjoyed in moderation.

Serving Gnocchi: Why Warm is Always Best

While gnocchi is technically safe to eat cold, its appeal drastically diminishes once it cools. Cold gnocchi tends to become dense, sticky, and clump together, losing the delicate, pillowy texture that makes it so delightful. The flavors also become muted, and the sauce may congeal, creating an unappealing mouthfeel. To truly appreciate the rich creaminess of the charred pepper sauce and the tender bite of the gnocchi, it is absolutely essential to serve this dish hot. The warmth enhances the aromatic qualities of the peppers and the savory depth of the short ribs, ensuring every forkful is a comforting and exquisite experience. Plan to serve it immediately after preparation for the best possible enjoyment.

Mastering Gnocchi: Knowing When It’s Perfectly Cooked

Cooking gnocchi to perfection is surprisingly straightforward and quick, making it an excellent choice for a gourmet meal that doesn’t require excessive cooking time. The tell-tale sign that your gnocchi is done is when it rises to the surface of rapidly boiling, salted water. This usually occurs within a mere 2 to 4 minutes, depending on the size and freshness of your gnocchi. Once they float, allow them to cook for another 15-30 seconds to ensure they are cooked through but still retain a slight chewiness, preventing them from becoming mushy. Avoid overcooking, as this can lead to a soft, gummy texture. A quick test of one piece will confirm its ideal doneness, ensuring your gnocchi is light and tender, ready to be tossed in our luscious charred pepper cream sauce.

Crafting the Irresistible Charred Pepper Cream Sauce

With our gnocchi expertise honed, let’s turn our attention to the star sauce: the charred pepper cream. This sauce is what truly elevates the dish, offering a depth of smoky flavor and a luxurious creaminess that coats every piece of gnocchi. The process begins with charring your bell peppers, a technique that unlocks their sweet, smoky essence.

For optimal charring, place the peppers directly over the flame of a gas burner, rotating them frequently with tongs until their skin is completely blackened and blistered on all sides. If you have an electric stove, you can achieve a similar effect by placing them under a hot broiler or in a very hot cast-iron pan, turning them often. Once charred, immediately transfer the hot peppers into a Ziploc bag or a bowl covered tightly with plastic wrap. This crucial step allows them to steam for approximately 30 minutes, loosening their skins and making them incredibly easy to peel. After steaming, the blackened skin should simply slip off, revealing the tender, smoky flesh underneath. Remove the stem and seeds, then proceed with the remaining sauce instructions, blending the charred peppers with a rich cream base to create a velvety smooth sauce that is nothing short of divine.

Pro Tip: Achieving the silkiest possible sauce is paramount to this recipe’s success. After blending your charred pepper cream sauce, press it through a fine mesh strainer. This step removes any remaining fibrous bits of pepper skin or seeds, resulting in an impeccably smooth and luxurious texture. While it adds a few minutes to your preparation time, the refined consistency it imparts to the sauce is absolutely worth the effort, transforming your dish into a restaurant-quality experience.

Mastering Oven Braised Beef Short Ribs

The foundation of this extraordinary meal lies in perfectly executed Oven Braised Beef Short Ribs. Braising is a magical cooking method that transforms tougher cuts of meat into unbelievably tender, flavorful masterpieces. While we have detailed guides like our Oven Braised Beef Roast and Korean Oven Braised Short Ribs posts that delve deeper into the nuances of beef ribs, here’s a quick overview of why they are so heavenly. Beef short ribs, with their rich marbling and connective tissues, are ideally suited for slow, moist-heat cooking. This process breaks down those tough fibers over several hours, resulting in meat that literally falls off the bone with minimal effort.

The beauty of oven braising is its ability to build deep, complex flavors. By first searing the seasoned ribs to develop a beautiful crust, then simmering them gently in a flavorful liquid with aromatic vegetables like onions and garlic, and fresh herbs like thyme, the meat absorbs all those incredible notes. The long, low-temperature cooking in a covered pot ensures a moist environment, allowing the ribs to become incredibly tender and luscious. When these meltingly tender short ribs meet the creamy charred pepper gnocchi, it creates a pairing that is truly luxurious and satisfying, a match made in culinary heaven.

Expediting Deliciousness: Instant Pot Beef Short Ribs

For those days when time is of the essence but you still crave the rich, comforting flavors of braised short ribs, your Instant Pot comes to the rescue! The pressure cooker dramatically cuts down on cooking time without sacrificing tenderness or flavor. You can achieve fall-off-the-bone short ribs in a fraction of the time compared to traditional oven braising, making it a fantastic alternative for busy weeknights or when you need a gourmet meal with less waiting.

To prepare your Beef Short Ribs in the Instant Pot, after searing the ribs for color and flavor, simply add your liquids and aromatics, then pressure cook them for about 45 minutes. Follow this with a natural release of pressure for 10 minutes to allow the meat to relax and reabsorb its juices, ensuring maximum tenderness. We are huge proponents of the Instant Pot for short ribs, and you’ll find other fantastic recipes like our Sticky BBQ Instant Pot Short Ribs and Mustard Carolina BBQ Sauce Instant Pot Short Ribs that highlight its efficiency and delicious results. This accelerated method ensures that even on a tight schedule, you can enjoy incredibly tender and flavorful short ribs that perfectly complement the charred pepper cream gnocchi.

Everyone needs another gnocchi recipe in their life, and this braised beef short ribs with charred pepper cream gnocchi is the best I’ve ever had!

Ingredients

Ribs

  • 1/2 Cup Flour
  • Salt
  • Pepper
  • 2 lbs Beef Short Ribs
  • 2 Tablespoon Olive Oil
  • 1/2 Cup Beef Broth
  • 1/3 Cup White Cooking Wine, or 1/2 cup white wine
  • 1 Onion, quartered
  • 6 Cloves Garlic, peeled
  • 5 Sprigs Thyme, fresh

Sauce

  • 4 Yellow Bell Peppers
  • 2 Tablespoon Butter
  • 2 Cloves Garlic, minced
  • 1 Shallot, minced
  • 1/3 Cup White Cooking Wine, or 1/2 cup white wine
  • 1 1/2 Cups Heavy Cream
  • 1/2-3/4 teaspoon Salt
  • Gnocchi
  • Parmesan, shaved
  • Thyme, fresh

Instructions

For The Ribs

  • Preheat the oven to 350°F (175°C).
  • Season the flour with salt and pepper. Dredge each short rib thoroughly in the seasoned flour on all sides.
  • Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Brown each side of the short ribs, including the ends, for about 1 minute per side until golden brown. Remove the ribs from the pan. Carefully wipe out any excess flour or browned bits that might burn.
  • Add the beef broth, white cooking wine, quartered onion, peeled garlic cloves, and fresh thyme sprigs to the pot. Bring the mixture to a simmer. Return the browned short ribs to the pot, ensuring they are partially submerged in the liquid. Place the lid securely on the pot.
  • Transfer the covered pot to the preheated oven and braise for 2 to 2 1/2 hours, or until the beef is incredibly tender and easily falls off the bones.

For The Sauce

  • While the ribs are braising, char the yellow bell peppers. You can do this on a grill, in a hot cast-iron skillet, or directly over a gas burner. Rotate the peppers until the skin is completely blistered and blackened on all sides.
  • Immediately transfer the charred peppers to a Ziploc bag and seal it closed, or place them in a bowl and cover tightly with plastic wrap. Allow the peppers to steam for 30 minutes. This helps loosen the skin for easy peeling.
  • Once cooled enough to handle, remove the peppers from the bag. Peel off the blackened skin, remove the stem, and discard the inner seeds. Chop the peeled peppers into quarters.
  • In a separate skillet, melt the butter over medium heat.
  • Add the minced garlic and shallots to the skillet. Sauté until fragrant and softened, about 3 minutes.
  • Stir in the white cooking wine and cook, stirring occasionally, until the liquid has reduced by half, approximately 4 minutes.
  • Add the heavy cream and the chopped charred peppers to the skillet. Reduce the heat to medium-low and let the sauce simmer gently for about 10 minutes, allowing the flavors to meld.
  • Remove the skillet from the heat and set aside for 3 minutes to cool slightly.
  • Carefully pour the sauce mixture into a blender and blend until completely smooth and creamy.
  • For an extra silky sauce, pass the blended mixture through a fine mesh strainer, using a spatula to help push the sauce through. Collect the strained sauce back into the skillet.
  • Season the charred pepper cream sauce with salt and pepper to taste. Keep the sauce warm over very low heat while you prepare the gnocchi.
  • Cook the gnocchi according to package directions until they float to the surface (usually 2-4 minutes). Drain them well. Add the cooked gnocchi directly to the warm charred pepper cream sauce and toss gently to coat evenly.
  • To serve, plate a generous portion of the creamy gnocchi. Top with one or two tender braised beef short ribs. Garnish with a few shavings of fresh Parmesan cheese and a sprinkle of fresh thyme for an elegant finish.

Recipe Notes

If using boneless ribs, cook them at 325°F (160°C) for 2 to 2 1/2 hours, or until fork-tender.

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream if needed to restore consistency.
