Ingredients 

For The Chicken:

  • 3-4  Chicken Breasts, boneless, skinless
  • 2 teaspoons Kosher Salt
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Parsley, dried

For The Sauce:

  • 1 Tablespoon Butter
  • 1/2 Cup Tomatoes, oil packed, sun-dried
  • 1 Cup Mushrooms, sliced Baby Bella *optional
  • Cloves Garlic, minced 
  • 1 teaspoon Italian Seasoning
  • Cup Heavy Cream, *see note
  • 1/4 Cup Parmesan Cheese, freshly grated
  • Salt and Pepper, to taste
  • teaspoon Cornstarch
  • 1 Tablespoon Water

Instructions 

  • Generously coat chicken breasts with kosher salt, garlic powder, and Italian seasoning.
    3-4  Chicken Breasts, 2 teaspoons Kosher Salt, 2 teaspoons Garlic Powder, 2 teaspoons Italian Seasoning
  • Heat a Cast Iron Skillet over medium-high heat with a drizzle of olive oil.
  • Carefully place the seasoned chicken breasts, presentation-side down, into the hot pan.
  • Cook the chicken breasts for approximately 5-7 minutes per side, or until they are golden brown, opaque throughout, and no longer pink inside. The internal temperature should reach 165°F (74°C).
  • Transfer the cooked chicken to a clean plate and set aside.
  • Using the same skillet (do not clean it, as the “fond” is full of flavor!), melt the butter. Drain approximately 2 teaspoons of the oil from your oil-packed sun-dried tomatoes and add it to the pan. If you need more fat, add a little extra olive oil.
    1 Tablespoon Butter, 1/2 Cup Tomatoes
  • Add the sliced Baby Bella mushrooms to the skillet and sauté for about 3 minutes until they begin to soften and release their moisture.
    1 Cup Mushrooms
  • Stir in the minced garlic and the remaining Italian seasoning, along with a dash of salt. Cook for about 1 minute, or until the garlic is fragrant and lightly golden. Be careful not to burn it.
    4  Cloves Garlic, 1 teaspoon Italian Seasoning
  • Add the sun-dried tomatoes to the pan and give them a quick stir to combine with the other aromatics.
    1/2 Cup Tomatoes
  • Pour in the heavy cream and stir well. Season the sauce with salt and freshly ground black pepper to taste.
    1  Cup Heavy Cream, 1/4 Cup Parmesan Cheese, Salt and Pepper
  • In a small bowl, whisk together the cornstarch and water to create a slurry. Bring the cream sauce to a gentle boil, and while continuously whisking, slowly add the cornstarch mixture to the center of the pan. Continue to whisk until the sauce has thickened slightly to your desired consistency.
    1  teaspoon Cornstarch, 1 Tablespoon Water
  • Reduce the heat to low. Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Let them simmer gently for a few minutes, allowing the flavors to meld and the chicken to warm through.
