Ingredients

  • 8 Ounces Penne Pasta, cooked
  • 2 Tablespoons Pine Nuts
  • 2 Cloves Garlic, minced
  • 1 Cup Sweet Basil, packed
  • 1/4 Cup Olive Oil
  • 1/4 Cup Parmesan Cheese, fresh, grated
  • Sea Salt and Fresh Black Pepper (to taste)
  • 2 Ears Corn on the Cob, roasted (or 1 bag frozen roasted corn)
  • Vine Ripe Tomatoes (about 1 pint cherry or grape tomatoes)
  • 7 Ounces Bocconcini (small fresh mozzarella balls)

Instructions

  1. Heat a large pot of water over high heat, adding a few pinches of salt to season the pasta. Once the water begins to boil, add the penne pasta. Turn the heat down to medium-high and continue to cook until al dente.
  2. Meanwhile, heat a small skillet to medium heat and add the pine nuts.
  3. Cook until toasted and golden on all sides, tossing the pan occasionally to help the nuts toast evenly. You should start to smell their nutty aroma.
