  • White Balsamic Citrus Basil Dressing (Culinary Treasures brand, or your favorite vinaigrette)
  • 1/2 Box Bow Tie Pasta (Farfalle)
  • 1 Small Bunch Broccoli, steamed
  • 1/2 Cup Oil-Packed Sun-Dried Tomatoes, drained and roughly chopped
  • Shredded Parmesan Cheese, for topping

Instructions

  1. In a sealable bag or shallow dish, place the chicken breast and add enough white balsamic citrus basil dressing to thoroughly coat the chicken. Seal the bag or cover the dish and allow the chicken to marinate in the refrigerator for at least two hours, or ideally, overnight (up to 1 day) for maximum flavor infusion.
  2. Once marinated, remove the chicken from the bag, discarding any remaining marinade.
  3. Heat a grill pan over medium-high heat. Grill the chicken breast for 5-7 minutes per side, or until it is fully cooked through and reaches an internal temperature of 165°F (74°C). Set aside to rest.
  4. Meanwhile, bring a large pot of salted water to a rolling boil. Add the bow tie pasta and cook according to package directions until al dente.
  5. While the pasta cooks, steam the broccoli florets until tender-crisp. You can do this in a steamer basket over boiling water or in the microwave. Drain well.
  6. Once the pasta is cooked, drain it thoroughly but reserve a tablespoon or two of the pasta water if you like for later. Return the drained pasta to the pot.
