Ingredients

For the Cheesecake

  • 16 Ounces Cream Cheese, (2 bricks, softened)
  • 1 1/3 Cups Sugar
  • Pinch Salt
  • 2 Cups Greek Yogurt, (Plain, 2% – we recommend Tillamook for ultimate creaminess)
  • 1 1/2 teaspoons Vanilla Extract
  • 1 1/2 teaspoons Lemon Juice
  • 6 Large Eggs, plus 2 large egg yolks
  • 1 Tablespoon Butter, (melted, for greasing the pan)

For the Graham Cracker Crust

  • 16 Graham Crackers, (crushed fine in a food processor)
  • 1/3 Cup Sugar
  • Pinch Salt
  • 1 Lemon, (zested)
  • 6 Tablespoons Butter, (melted)

For the Raspberry Sauce

  • 2 Cups Raspberries
  • 1/3 Cup Brown Sugar
  • 1 teaspoon Unflavored Gelatin
  • 1 Tablespoon Water

Instructions

For the Crust

  1. Preheat your oven to 325°F (160°C).
  2. While the oven heats, cut the cream cheese into cubes and set aside to soften.
  3. In a food processor, combine the crushed graham crackers, sugar, pinch of salt, and lemon zest. Pulse until well blended.
  4. Stir in the melted butter until the mixture is evenly moistened. Press this mixture firmly into the bottom of a 9-inch (23 cm) springform pan to form the crust. For a “double-decker” crust, ensure an even, slightly thicker layer.
  5. Bake the crust for 12-13 minutes, then remove from the oven and allow it to cool completely on a wire rack.

For the Cheesecake Filling

  1. Increase the oven temperature to 500°F (260°C).
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the softened cream cheese on medium-low speed until smooth and creamy, about 1-2 minutes. Scrape down the sides of the bowl as needed.
  3. Add the sugar and pinch of salt to the cream cheese, beating until just combined. Be careful not to overmix. Scrape down the sides again.
  4. Stir in the Greek yogurt, vanilla extract, and lemon juice. Mix on low speed until the mixture is smooth and fully incorporated.
  5. Scrape down the sides of the bowl. Add the two egg yolks and beat briefly until combined, then scrape down the sides once more.
  6. Gradually add the 6 large eggs, two at a time, mixing on low speed after each addition just until incorporated. Overmixing can introduce too much air, leading to cracks.
  7. Once all eggs have been added, mix for just 1 minute more on low speed to ensure everything is thoroughly combined without over-aerating.
  8. Using a pastry brush, gently grease the inside walls of the cooled springform pan with the melted butter, taking care not to disturb the crust.
  9. Pour the cheesecake filling over the cooled graham cracker crust in the prepared springform pan.
  10. Bake at 500°F (260°C) for exactly 10 minutes. Do NOT open the oven door during this initial bake. After 10 minutes, without opening the door, reduce the oven temperature to 200°F (95°C).
  11. Continue baking for approximately 1 1/2 hours, or until the internal temperature of the cheesecake reaches 150°F (65°C) when measured with a thermometer. The center should still have a slight wobble.
  12. Carefully remove the cheesecake from the oven and let it cool on a wire rack for 5 minutes. Then, run a thin pairing knife around the edges of the cheesecake to prevent cracking as it cools further.
  13. Allow the cheesecake to cool completely on the wire rack for an additional 2 1/2 hours at room temperature. Once cooled, wrap it tightly in plastic wrap and refrigerate for at least 3 hours, or ideally overnight (up to 3 days) for the best texture and flavor.
  14. To unmold your cheesecake beautifully, take a hot, damp dish towel and wrap it around the sides of the springform pan for about a minute. This gentle warmth helps release the cheesecake from the pan walls. Then, carefully open the springform latch.
  15. Serve your perfected Greek Yogurt New York Cheesecake with the luscious Red Berry Sauce.

For the Raspberry Sauce

  1. In a saucepan, combine the raspberries and brown sugar. Cook over medium-low heat, gently smashing the berries occasionally, for about 6-8 minutes until the berries break down and the sugar dissolves, creating a syrupy sauce.
  2. Remove the saucepan from the heat. Place a fine-mesh strainer over a bowl and pour the berry mixture into the strainer. Use a rubber spatula to press the mixture through the sieve, extracting all the smooth sauce and leaving behind the seeds.
  3. Return the strained berry sauce to the clean saucepan.
  4. In a small bowl, sprinkle the unflavored gelatin over the tablespoon of water. Let it sit for 3 minutes to bloom.
  5. Add the bloomed gelatin to the warm berry sauce in the saucepan. Stir until the gelatin is fully dissolved.
  6. Allow the berry sauce to cool at room temperature for at least 2 hours, or chill in the refrigerator until slightly thickened.
  7. Before serving, whisk the sauce briefly to ensure a smooth, pourable consistency. Drizzle generously over slices of Greek Yogurt New York Cheesecake.
