Hey friends! I’m back, and it’s wonderful to connect with you again. Some of you might remember me from when Carrian shared the caramel Bugles recipe a few months ago – another fantastic idea for a holiday neighbor treat, truly dreamy! But that’s a story for another day. Today, our focus is entirely on the beloved gingerbread boys, as we affectionately call them.
This particular recipe is one I inherited through marriage, and I often joke that it might just be the best thing about marrying my husband! Of course, that’s just a jest; there are countless reasons why he’s amazing, but these cookies certainly rank high on the list.
Our very first Christmas as a married couple, my husband James and I had the privilege of making these cookies with his mother, Sondra, the undisputed gingerbread boy master. My husband and I typically approach this as a team effort, and we’ve developed a harmonious kitchen dance over the years. Once you begin, the process moves quite swiftly, so it’s essential to thoroughly prepare your workspace and organize all your ingredients before you start mixing.



Prepare Your Workspace for Seamless Baking
- Begin by preparing your cookie sheets. Line them generously with parchment paper or silicone baking mats (silpats). Having multiple sheets ready will ensure a smooth, continuous baking process.
- Set out your cooling racks. Position them over a layer of parchment paper or newspaper to efficiently catch any drips from the glaze, making cleanup much easier.
- Keep a heat-safe glass bowl readily available. This will be used to reheat portions of your dough if they cool down, maintaining optimal workability.

- While the molasses mixture simmers, cream together the sugar, egg, and vanilla in a stand mixer fitted with the paddle attachment. Beat until the mixture is light and smooth.
- In a separate glass measuring cup, dissolve the baking soda in the hot water. Once fully dissolved, add this solution to the sugar and egg mixture in the stand mixer and stir on low speed just until combined.
- Incorporate all the ground spices (cloves, cinnamon, ginger) and salt into the wet mixture. Beat until these aromatic ingredients are thoroughly combined and evenly distributed.

A thin metal spatula is incredibly helpful for carefully lifting the cut cookies from the counter without distorting their shape, transferring them directly to your prepared cookie sheet.

A medium-sized cookie (3-4 inches) will require 7-8 minutes. For a full-sized gingerbread man (5-6 inches), expect a baking time of approximately 10 minutes. - As soon as the cookies are done baking, remove the hot pan from the oven and place it immediately next to your bowl of prepared glaze. Speed is key here!
- As soon as it is humanly possible to handle the cookies (they will be hot!), carefully pick up each cookie and completely dunk it into the glaze, ensuring all sides are coated. Immediately place the glazed cookies onto a cooling rack to drip and dry. A few sacrificed fingertips are often the mark of a perfectly glazed batch! Dunking them while they are still hot helps to seal the cookie, locking in that signature chewiness.

For those with dietary considerations, I have fantastic news! A friend successfully created a delicious gluten-free version of this cookie last year. She achieved excellent results by substituting the all-purpose flour with Gfjules flour in a 1:1 ratio. However, there’s a slight modification needed for the glaze when making the gluten-free version. Due to the properties of GF flour, dunking the hot cookies directly into the glaze can cause the flour to soak it up, resulting in a sticky, undesirable texture. December, for me, can become incredibly hectic with a dizzying array of parties, family gatherings, school performances, Christmas card preparations, gift buying and wrapping, holiday baking, and maintaining cherished family traditions. Just thinking about it can be exhausting!
That’s precisely why I make it a point to start baking these gingerbread cookies right after Thanksgiving. It allows me to check one significant item off my holiday to-do list early, alleviating some of the stress and freeing up precious time closer to Christmas.

Chewy Gingerbread Man Cookies

Ingredients
Cookies
- 1 Cup Molasses, Grandma’s brand
- 1 Cup Butter Flavored Shortening
- 1 Cup Sugar
- 1 Large Egg
- 1/2 teaspoon Vanilla
- 2 teaspoons Baking Soda
- 1/2 Cup Water, hot
- 3/4 teaspoon Ground Cloves
- 3 teaspoons Cinnamon
- 1 teaspoon Salt
- 1 1/2 teaspoons Ginger, ground
- 6 Cups Flour
Glaze
- 6 Cups Powdered Sugar
- 2/3 Cups Milk
- 4 teaspoons Vanilla
Instructions
Prepare Your Space.

Prepare your work space as you will need to move quickly when baking. Set out multiple cookie sheets with parchment or a silpat. Arrange cooling racks (I prefer to use 4) over parchment or any paper to catch icing drips. Finally, set aside a glass bowl for reheating the dough in the microwave.

Preheat the oven to 375 degrees Fahrenheit.
Glaze

Mix all ingredients (Powdered Sugar, Milk, Vanilla) until smooth in a glass bowl and set aside.
Cookies

On a medium heat, add the molasses (1 Cup) and butter flavored shortening (1 Cup) to a pot. Simmer molasses and shortening for 2-5 minutes (do not scorch). Whisk vigorously in the beginning to help emulsify the two together. It will look like nothing is happening, but suddenly the mixture will coat a spoon and run off in a cohesive, sticky sauce.

Meanwhile, in a standing mixer with the paddle attachment, cream the sugar (1 Cup), large egg (1), and vanilla (1/2 teaspoon) until smooth.

In a glass measuring cup, dissolve baking soda (2 teaspoons) in hot water (1/2 Cup) and add to creamed mixture. Stir on low to combine.

Blend ground cloves (3/4 teaspoon), cinnamon (3 teaspoons), salt (1 teaspoon), and ground ginger (1 1/2 teaspoons) into creamed mixture.

Add hot molasses mixture and beat again until incorporated.

Beat in flour (6 Cups), slowly at first and then notice how the extremely full and wet bowl soaks up all the flour and becomes a very sticky dough. Remove to the table where you’ll be cutting.

Spray the counter with nonstick spray and remove 1/3 of the dough. Using a rolling pin, roll the dough about 1/2″ thick and using a very small cookie cutter (you can use bigger, but small is our favorite way) cut out little gingerbread men while the dough is still hot. See NOTES!

Bake at 375 degrees for 5-10 minutes, depending on cookie size. Very small men need 5 minutes while a 3-4″ needs 7-8 and a regular sized cookie needs 10 minutes.

Remove the pan quickly to the counter by the glaze and immediately dunk each hot cookie completely in the glaze, coating the cookie on all sides.

Drain cookies on cooling rack until dry.

Store in an airtight container or freezer bag. To freeze, press out as much air as possible and seal the bag. Cookies are good for up to 2 months in the freezer when properly stored. .
Recipe Notes
- The dough will seem too sticky to roll but don’t add flour. It will roll out fine.
- Use cooking spray on the counter and rolling pin and not flour to roll it out.
- Keep the dough warm at all times. If it cools down, warm it up in the microwave for 5-10 seconds.
- Dunk them in the glaze right when the come out of the oven even though they are hot. If they’ve baked enough you can remove them, if they are still too soft you won’t be able to pick them up as they will need to bake a little longer to avoid squishing them.
- Rotate the glazed cookies after a few minutes so they don’t stick to the cooling rack.
Cookies will keep for up to a month in an airtight container.
