Ingredients for the Mexican Street Corn Ground Beef Sweet Potato Bowl
Let’s delve into the key ingredients that make this protein bowl recipe a standout. We’re talking about simple, wholesome foods that combine to create a truly satisfying and flavorful meal.
- Sweet Potatoes: Roasted until tender with slightly caramelized edges, sweet potatoes provide natural sweetness and make the bowl extra satisfying and filling.
- Olive Oil: A drizzle of olive oil helps everything roast up to golden perfection and adds a hint of richness.
- Smoked Paprika: Infuse a subtle smoky depth that complements the sweet potatoes and beef beautifully with smoked paprika.
- Kosher Salt: Don’t forget this essential! Kosher salt brings out and enhances all the flavors.
- Lean Ground Beef: A fantastic source of protein that forms the base of the bowl. Lean ground beef is hearty, satisfying, and readily absorbs the delicious seasoning.
- Kinder’s Carne Asada Seasoning: Offers a bold, savory, and slightly citrusy flavor with a touch of spice. An easy shortcut to deliciousness, or use your favorite taco seasoning.
- Water: Helps the seasoning coat the beef evenly and keeps it wonderfully juicy.
- Avocados: Creamy and fresh, avocados offer the perfect cooling contrast to the warm, savory ingredients.
- Cilantro: Adds a burst of fresh flavor that beautifully ties all the elements together.
- Black Pepper: Balance and depth are enhanced with a touch of black pepper.
- Pickled Red Onions: Tangy, slightly sweet, and provides a burst of flavor to cut through the richness.
- Lime: Fresh lime juice brightens all the flavors and elevates the dish.
For the Street Corn (Elote)
- Cottage Cheese: Adds a creamy, protein-rich twist to the sauce while keeping things light.
- Mexican Crema: For the classic, creamy, and rich street corn flavor, Mexican crema is a must.
- Frozen Fire-Roasted Corn: Offers a smoky sweetness and convenience without the need for grilling.
- Lime: Both the zest and juice add a vibrant citrus flavor and tang.
- Chili Powder: Contributes a mild kick and signature street corn flavor.
- Cotija Cheese: Offers a salty, crumbly finish that makes the elote truly irresistible.

How to Make Mexican Street Corn Ground Beef Sweet Potato Bowls
This easy sweet potato protein bowl comes together in just a few simple steps. Most of the magic happens while ingredients are roasting or simmering on the stovetop.
- Roast the Sweet Potatoes: You can use an air fryer or a conventional oven to roast the sweet potatoes until they are perfectly crispy. Make sure to toss the cubed sweet potatoes with olive oil and smoked paprika before roasting.
- Brown the Ground Beef: While the sweet potatoes are roasting, cook the ground beef in a skillet over medium heat. When the beef is almost browned, add the Carne Asada (or taco) seasoning and water, then let it simmer for a few more minutes to absorb the flavors.
- Make the Elote (Mexican Street Corn): Blend the cottage cheese until it’s completely smooth. Combine all the elote ingredients in a medium-sized bowl and gently mix until well combined.
- Assemble the Bowls: Divide the roasted sweet potatoes, seasoned ground beef, and creamy elote among bowls. Top with chopped avocado, pickled red onions, jalapeno slices (if desired), and fresh cilantro. Serve immediately and enjoy!
Substitutions and Variations
Want to make this meal even leaner? You can substitute the ground beef with ground turkey or ground chicken.
If you aren’t a fan of sweet potatoes, regular potatoes will work. Yukon gold potatoes are especially good for roasting.
Don’t hesitate to customize the toppings to your preferences! You can add diced tomatoes, shredded cheese, thinly sliced radishes, black beans, or any other toppings that your family enjoys.

Meal Prepping Mexican Street Corn Bowls
These bowls are the perfect candidates for **meal prep**, as all components hold up well and reheat beautifully. A little bit of prep at the beginning of the week provides you with healthy, high-protein meals throughout the week. It’s the ideal lunch solution!
- Prep the Components Separately: Cook the ground beef, roast the sweet potatoes, and prepare the elote mixture. Let everything cool completely before storing.
- Store in Separate Containers: Store each element separately to allow for easy reheating. The ground beef and sweet potatoes reheat best when done individually. Add the fresh avocado just before serving to prevent browning.
Storing and Reheating Leftovers
Leftovers are best when stored in airtight containers within the refrigerator. The ground beef and creamy elote will last for up to 4 days, while the sweet potatoes can last for up to a week.
When it’s time to reheat, the sweet potatoes and ground beef are easily warmed up separately. If you are in a rush, the microwave is an excellent option. However, reheating the sweet potatoes in the air fryer will restore their crispy texture.

This is a dish that truly checks all the boxes: it’s easy to make, incredibly satisfying, packed with flavor, and genuinely good for you. Whether you’re gearing up for meal prep or looking to put a quick dinner on the table, these **high-protein Mexican Street Corn Ground Beef Sweet Potato Bowls** consistently deliver.
