Delicious and crispy Baked Kung Pao Chicken, a family-favorite dinner recipe ready to devour.

Hello, fellow food enthusiasts! Alyssa here from The Recipe Critic, absolutely thrilled to share one of our most beloved family recipes with you today. My journey with Carrian from Oh Sweet Basil began a couple of years ago at a blog conference, and we instantly connected over our shared passion for creating delicious meals. She’s truly one of the sweetest people you’ll ever meet, and it’s always a joy to collaborate with her.

As you might know from Carrian’s recent announcement here, she’s expecting another wonderful baby! Pregnancy can be incredibly challenging, and witnessing her go through such difficult sickness truly breaks my heart. So, today, I’m stepping in to bring Carrian (and all of you!) a comforting, flavorful dinner that promises to be a new favorite. This isn’t just any meal; it’s a dish so universally adored in our home that I’m confident it will become a staple in yours too.

What sets this Baked Kung Pao Chicken apart is its incredible breading—achieved through a simple yet ingenious technique that rivals any high-end Chinese restaurant. We’re talking about chicken that’s perfectly crisp on the outside and wonderfully juicy within, all without the hassle or mess of deep-frying. The magic happens in the oven, where a low baking temperature transforms the breaded chicken pieces into golden, irresistible bites, while simultaneously allowing the rich, flavorful sauce to thicken beautifully around them. While you could certainly pan-fry the chicken and toss it in the sauce, the oven method delivers a consistently delicious result with a perfectly caramelized glaze that’s hard to beat.

I distinctly remember one of the best compliments this recipe ever received: “My husband actually checked the garbage because he thought I ordered takeout – he couldn’t believe I made something so good!” This anecdote perfectly encapsulates the dish’s appeal. It truly tastes like it came from your favorite Chinese eatery, but with the added satisfaction of knowing you prepared it yourself. The ease of preparation, combined with its extraordinary flavor, makes this recipe a true culinary gem.

Kung Pao is one of my all-time favorite flavor profiles. It strikes that ideal balance of spicy, sweet, and savory, offering just enough heat to tantalize your taste buds without being overwhelmingly hot. The addition of vibrant red peppers and crunchy peanuts throughout the dish introduces a delightful texture contrast, elevating every bite. The ingredients are remarkably simple, yet they come together to create an explosion of flavor that will astound you. From your very first mouthful, you’ll understand why this Baked Kung Pao Chicken consistently earns rave reviews and becomes an instant classic in every household that tries it. Don’t just take my word for it—give it a try, and prepare to be amazed!

Understanding Kung Pao Chicken: A Culinary Classic

What is Kung Pao Chicken? Kung Pao Chicken (Gong Bao Ji Ding) is a classic, spicy, stir-fried Chinese dish originating from the Sichuan province. It traditionally features small, diced pieces of chicken, often marinated for tenderness, stir-fried with roasted peanuts, fresh vegetables (like bell peppers and green onions), and a generous amount of dried chili peppers. The distinctive flavor profile comes from a savory, sweet, and tangy sauce, typically made with soy sauce, vinegar, sugar, and Sichuan peppercorns, which contribute a unique numbing and tingling sensation known as “málà.” This dish is renowned for its complex layers of taste and delightful textural contrasts, making it a beloved staple in Chinese cuisine worldwide.

Is Rice Gluten-Free? Navigating Dietary Choices

Is Rice Gluten Free? Yes, all forms of pure rice are naturally gluten-free. This includes common varieties like brown rice, white rice (such as basmati, jasmine, or arborio), and wild rice. Rice is a staple food for a large portion of the world’s population and is an excellent option for individuals following a gluten-free diet due to celiac disease or gluten sensitivity. When purchasing rice products, it’s always wise to check labels for potential cross-contamination warnings, especially with processed rice items like rice mixes, which might contain gluten-containing additives or flavorings. For pairing with dishes like our Baked Kung Pao Chicken, plain steamed white or brown rice is a perfect, naturally gluten-free accompaniment.

Quinoa as a Rice Substitute: A Healthy Alternative

Can You Substitute Quinoa for Rice? Absolutely! Quinoa is a fantastic and highly nutritious alternative to rice, offering a different set of health benefits. One cup of cooked quinoa contains approximately 40 fewer calories than one cup of white rice, while boasting a significantly higher protein content and substantially fewer carbohydrates. As a complete protein, quinoa provides all nine essential amino acids, making it an excellent choice for vegetarians and vegans, or anyone looking to boost their protein intake. It’s also rich in fiber, vitamins, and minerals. Quinoa has a slightly nuttier flavor and a chewier texture compared to rice, which can add an interesting dimension to your meal. Its versatility makes it a good, healthier substitute for rice, complementing the rich flavors of a dish like Kung Pao Chicken beautifully.

Crispy and saucy Baked Kung Pao Chicken, a perfect homemade Chinese dish.

Everyone who comes over for dinner begs for us to make this awesome Baked Kung Pao Chicken. Holy crispy, saucy chicken that everyone loves to devour!

Ingredients

  • 3-4 Chicken Breasts, cut into bite-sized pieces
  • Salt and Pepper to taste
  • 1½ Cup Cornstarch
  • 3 Eggs, beaten
  • ¼ Cup Canola Oil
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Vinegar
  • 1 Tablespoon Red Chili Paste, like Sriracha
  • 1 teaspoon Garlic, minced
  • 1/4 Cup Brown Sugar
  • 1/2 Tablespoon Cornstarch
  • 1 Red Pepper, chopped
  • 1/4 Cup Peanuts
  • Green Onions, chopped for garnish

Instructions

  1. Preheat oven to 325 degrees F (160 degrees C).
  2. Cut chicken breasts into bite-sized pieces and season generously with salt and pepper.
  3. In separate bowls, prepare your breading stations: one with 1½ cups of cornstarch and another with 3 slightly beaten eggs.
  4. Dip each chicken piece into the cornstarch first, ensuring it’s fully coated, then dredge it through the egg mixture. (Yes, cornstarch first, then egg – trust this technique for ultimate crispiness!)
  5. Heat ¼ cup canola oil in a large skillet over medium-high heat. Carefully add the coated chicken pieces and cook until evenly browned on all sides. You may need to do this in batches to avoid overcrowding the pan.
  6. Transfer the browned chicken into a 9×13 inch baking dish that has been lightly greased.
  7. In a medium-sized mixing bowl, whisk together the soy sauce, vinegar, red chili paste (such as Sriracha for that perfect kick), minced garlic, brown sugar, and ½ tablespoon of cornstarch until well combined and smooth. This creates your rich and flavorful Kung Pao sauce.
  8. Pour the prepared sauce evenly over the chicken in the baking dish, tossing gently to ensure all pieces are thoroughly coated.
  9. Sprinkle the chopped red peppers and peanuts over the sauced chicken, adding both color and crunch.
  10. Bake for 1 hour, or until the chicken is cooked through and the sauce has thickened to a glossy perfection.
  11. For an even coating and deeper flavor, stir the chicken every 15 minutes during baking to ensure each piece is beautifully coated in the simmering sauce.
  12. Garnish with freshly chopped green onions before serving for a burst of fresh flavor and color.
