Prepare to surprise your taste buds and impress your loved ones with this incredible concoction!

The Genesis of a Family Favorite Chili

My husband and I have a daily ritual: he calls me from work, often multiple times, just to check in, share a moment, and say “I love you.” One particular day, after a long week of meal planning, I decided it was his turn to pick dinner. As much as I adore cooking, sometimes the sheer mental effort of deciding “what to make tonight” feels more daunting than tackling a chore like scrubbing the bathroom. So, when he gave the familiar “whatever you feel like” response, I gently but firmly pushed back, insisting he choose. His answer was simple: “Chili.” And so, the quest for the ultimate chili began.

I immediately set to work, eager to craft a dish that would satisfy his craving. Little did I know, this simple request would lead to a groundbreaking discovery in our kitchen, creating what is now unequivocally the best chili I have ever made. It’s a recipe born out of a desire for something deeply flavorful and a dash of spontaneous creativity. What emerged was a chili that perfectly balances a subtle kick with an incredibly rich, hearty, and unique taste profile.

The Unexpected Twist: Dr Pepper and Chocolate in Chili

The journey to these secret ingredients was serendipitous. Initially, I considered using beef broth for a robust flavor, but then contemplated a lighter turkey chili, which made the beef broth seem less fitting. Chicken stock crossed my mind, but I knew it would yield a milder flavor than I desired. I needed something with depth, something that would truly make this chili stand out. As I pondered, my gaze landed on a Dr Pepper in the fridge. Now, I’m not typically a soda buyer, but a thoughtful friend had left it for my husband, knowing it was his preferred beverage.

A sudden spark of inspiration hit me: why not? I poured the Dr Pepper directly into the pot. I had a strong gut feeling, a sense deep in my bones, that this unconventional addition would be fantastic. Emboldened by this daring move, another idea quickly followed. I’d experienced savory dishes enhanced by a secret touch of chocolate, so why not here? A tablespoon of unsweetened cocoa joined the mix. The combination might sound unusual, but the results were nothing short of spectacular. This chili delivers a delightful, subtle kick – so much so that even my little girls enjoyed it – while boasting a flavor that is incredibly rich, wonderfully hearty, and truly amazing.

When my husband returned home, he settled in for dinner and asked for “his DP.” I had to break the news: “It’s gone!” He looked at me, bewildered, convinced I had either given it away or, worse, just tossed it. His expression conveyed a silent plea: “You gave away my precious Dr Pepper?” I quickly clarified, “Um, it’s how I made the chili!” His shock swiftly turned to excitement, and he wasted no time diving in. The outcome? He didn’t just like it; he absolutely loved it. And I promise, you will too.

Chili FAQs: Your Questions Answered

What Are the Best Beans for Chili?

Traditionally, pinto beans are the star of many classic chili recipes due to their creamy texture and ability to absorb flavors beautifully. You have several options for incorporating them: you can use readily available canned chili beans, canned pinto beans (just remember to drain and rinse them), or, for a more homemade touch, soak and cook dried pinto beans from scratch. While pinto beans are a favorite, the best beans for chili ultimately depend on your personal preference and what you have on hand.

Is Ground Turkey a Healthier Choice Than Ground Beef for Chili?

The healthiness of ground turkey versus ground beef largely depends on their lean meat to fat ratios. A very lean cut of ground beef, for example, might be healthier than a fattier ground turkey product. However, generally speaking, ground turkey tends to be leaner than most ground beef options. Opting for a higher percentage lean ground turkey can significantly reduce the fat content of your chili, making it a lighter, yet still flavorful, alternative. It’s always a good idea to check the nutritional labels to make an informed choice that aligns with your dietary needs.

What Kind of Beans Can You Substitute for Pinto Beans in Chili?

If pinto beans aren’t available or you’re looking to experiment with different textures and flavors, several excellent substitutes can work wonderfully in chili. Navy beans, with their small size and mild flavor, are a fantastic option. Great Northern beans, similar in texture but slightly larger, also make an excellent choice. Other popular bean substitutes include kidney beans, black beans, or even a mix of several types to add complexity and visual appeal to your chili.

Mastering the Unique Flavors: Why Dr Pepper and Chocolate Work

The idea of adding soda and chocolate to chili might seem unorthodox, but there’s a culinary logic behind it. Dr Pepper, with its unique blend of 23 flavors, including notes of cherry, almond, and vanilla, adds a subtle sweetness and a deep, complex caramelization that enhances the savory spices of the chili. It’s not about making the chili taste like soda, but rather using the soda’s nuanced profile to build layers of flavor. Similarly, unsweetened cocoa powder doesn’t make the chili sweet or chocolatey in a dessert sense. Instead, it acts as a flavor enhancer, deepening the color, adding richness, and lending an earthy bitterness that complements the chili powder and cumin, creating a more robust and well-rounded taste. Think of it as a secret weapon for umami, much like how it’s used in mole sauces.

Serving Suggestions and Toppings Galore

This Dr Pepper and chocolate chili is fantastic on its own, but it truly shines when paired with the right accompaniments. Classic chili toppings are always a hit: a dollop of cool sour cream helps balance the spice, while a generous sprinkle of grated cheddar or Monterey Jack cheese adds a creamy, salty finish. Freshly chopped green onions provide a bright, herbaceous counterpoint. For a delightful crunch, serve with corn chips, cornbread, or even a side of warm tortillas. Don’t be afraid to get creative with other toppings like diced avocado, a squeeze of lime juice, a sprinkle of fresh cilantro, or a dash of your favorite hot sauce for an extra kick. This chili is also excellent served over rice, pasta (for a chili mac experience), or baked potatoes.

Storing and Freezing Your Dr Pepper and Chocolate Chili

One of the best things about chili is how well it keeps and often tastes even better the next day as the flavors meld. This Dr Pepper and Chocolate Chili is no exception. Store any leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, chili freezes exceptionally well. Allow it to cool completely before transferring it to freezer-safe bags or containers. It can be frozen for up to 6 months. To reheat, simply thaw in the refrigerator overnight and then warm gently on the stovetop or in the microwave until heated through. Freezing makes this recipe perfect for meal prepping or having a quick, delicious dinner on hand for busy weeknights.

Ingredients

Recipe by Sweet Basil

  • 2 Tablespoons Canola Oil
  • 1 Large Yellow Onion, diced
  • 3 Cloves Garlic, minced
  • 2 Bell Peppers (1 red, 1 yellow), minced
  • 1 Pound Ground Turkey
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Cumin, heaping
  • 1/4 teaspoon Cayenne, or more to taste
  • 1 teaspoon Oregano
  • 1 Tablespoon Hershey’s Unsweetened Cocoa
  • 1/2 teaspoon Allspice
  • 1/4 teaspoon Thyme
  • 12 Ounces Dr Pepper
  • 2 Tablespoons Tomato Paste
  • 1 Tub Knorr Homestyle Chicken Stock, *see note
  • 1 Can Pinto Beans, drained
  • 1 Can Tomatoes for Chili (or Mexican style tomatoes)

Instructions

  1. In a heavy-bottomed pot, add the canola oil and heat over medium heat.
  2. Add the diced onion and sauté until tender, about 5-7 minutes.
  3. Stir in the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
  4. Add the minced bell peppers and sauté for another 2-4 minutes, or until the peppers are tender.
  5. Add the ground turkey to the pot and cook until almost completely browned, about 5-6 minutes.
  6. Sprinkle all the spices (chili powder, cumin, cayenne, oregano, unsweetened cocoa, allspice, thyme) over the meat and stir quickly to coat everything evenly.
  7. Allow the spices to cook onto the meat for 1-2 minutes, enhancing their aroma and flavor.
  8. Pour in the Dr Pepper, add the tomato paste, and stir in the Knorr Homestyle Chicken Stock.
  9. Continue stirring until the stock and tomato paste have fully dissolved into the liquid.
  10. Add the drained pinto beans and chili tomatoes. Reduce the heat to a low simmer.
  11. Simmer the chili for at least 30 minutes, or for several hours (up to all day) on very low heat. The longer it simmers, the deeper and richer the flavors will become. I typically let mine simmer for about 2 hours.
  12. Serve your delicious Dr Pepper and Chocolate Chili with cool sour cream, grated cheese, fresh green onions, and a side of your favorite chips or cornbread.

Recipe Notes

* You can use any condensed broth starter from a jar; the paste kind works better than cubes. We highly recommend “Better than Bouillon” for this recipe. Use approximately 3.5 teaspoons of Better than Bouillon for optimal flavor.

This chili will keep well in the refrigerator for up to 3 days, or you can freeze it for up to 6 months for a quick meal later.
