Ingredients

  • 3 Red Bell Peppers
  • 2 Tablespoons Pine Nuts, optional, but I love that nutty flavor
  • 1 lb Pasta, orecchiette or campanelle
  • Olive Oil, drizzle
  • 1 small Shallot, minced fine
  • 2-3 Cloves Garlic, minced
  • Salt, to taste
  • 1 Cup Heavy Cream
  • 1/4 Cup White Wine or Cooking White Wine, Optional
  • Parmesan, fresh, shaved
  • Basil for garnish

Instructions

  • Preheat your oven or broiler to high heat. Place the 3 Red Bell Peppers on a baking sheet. Roast them, turning occasionally, until their skin is completely blackened and blistered on all sides. This process can take 15-20 minutes in an oven or less under a broiler.
  • Carefully transfer the hot roasted peppers into a Ziploc bag or a heat-safe bowl covered tightly with plastic wrap. Allow them to steam for about 10-15 minutes. This steaming process makes the skins incredibly easy to remove.
  • Once cool enough to handle, remove the skins from the peppers. Then, carefully remove the stems and seeds. Discard the skins, stems, and seeds, and set the roasted pepper flesh aside.
  • In a large pot of salted boiling water, begin to cook the 1 lb Pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  • While the pasta cooks, combine the prepared roasted red peppers and the Pine Nuts (if using) in a blender or food processor. Process until the mixture is completely smooth and creamy. Set aside.
