  • 1 1/4 Cup Milk
  • 1/4 Cup Buttermilk
  • 1 1/8 Cup Canola Oil

  • 3 Cups Flour
  • 1 1/2 teaspoons Salt
  • 1 1/2 teaspoons Baking Powder
  • 1 1/2 Tablespoons Poppy Seeds, I often toss in 2

For the Glaze

  • 3/4 Cups Sugar
  • 1/4 Cup Orange Juice
  • 1/2 teaspoon Almond Extract
  • 1/2 teaspoon Vanilla Extract
  • 1/8 teaspoon Butter Flavoring
  • 1/4 Cup Melted, Unsalted Butter

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Lightly spray and flour 6 mini loaf pans. To flour, put a little flour in after spraying, then tap the pan as you turn it to evenly coat all sides and the bottom.
  • In the bowl of a standing mixer, beat the eggs, sugar, milk, buttermilk, and oil until just combined.
    3 Large Eggs,
    2 Cups Sugar,
    1 1/4 Cup Milk,
    1/4 Cup Buttermilk,
    1 1/8 Cup Canola Oil
  • Add the almond, butter, and vanilla extracts to the wet mixture and mix again until fully incorporated.
    1 1/2 teaspoons Almond Extract,
    1 1/2 teaspoons Vanilla,
    1 1/2 teaspoons Butter Flavoring
  • In a separate large bowl, whisk together the flour, salt, baking powder, and poppy seeds.
    3 Cups Flour,
    1 1/2 teaspoons Salt,
    1 1/2 teaspoons Baking Powder,
    1 1/2 Tablespoons Poppy Seeds
  • Gradually add the dry ingredients to the wet ingredients and mix until everything is just incorporated. Be careful not to overmix; a few lumps are fine for a tender bread.
  • Pour the batter evenly between 6 prepared mini loaf pans. (Using 5 pans is sometimes acceptable, but never attempt to use only 4 pans or you risk overflow and an oven mess!) Bake for 55 minutes, or until a wooden skewer inserted into the center of a loaf comes out clean.
  • Allow the loaves to cool in the pans for a couple of minutes after baking. While still warm, carefully remove them and roll each loaf in the prepared glaze. Return the glazed loaves to the pans for easy transport if delivering to friends and neighbors.
  • Alternatively, find a quiet moment after the kids are asleep and savor every delicious bite yourself!

  • In an 8×8-inch pan or a pie pan, whisk together the sugar, orange juice, almond extract, vanilla extract, butter flavoring, and melted unsalted butter until completely smooth.
