The Ultimate Deep Fried Strawberry Shortcakes: A Crispy, Sweet Delight

There’s a special place in everyone’s heart for strawberry shortcake, a quintessential summer dessert that evokes memories of backyard barbecues and sun-drenched picnics. We’ve even featured delightful variations in our Sweet Basil Kitchen Cookbook, including a vibrant lemon strawberry shortcake. My love for this classic runs deep, inspiring multiple recipes. But then, a revelation struck: what if we took that beloved shortcake and transformed it into something even more extraordinary through the magic of deep frying?

The result is nothing short of spectacular. Deep Fried Strawberry Shortcakes are an experience akin to life’s most cherished moments – that exhilarating first kiss, the joyous wedding day, or the pure bliss of holding your newborn for the very first time (minus the less-than-glamorous parts of pregnancy and birth, of course!). Each bite offers a delightful contrast: the warm, crispy exterior gives way to a tender, fluffy interior, perfectly complementing the cool, sweet berries and rich whipped cream. It’s a symphony of textures and flavors that will leave you utterly speechless and craving more.

Choosing the Best Oil for Deep Frying Your Shortcakes

Achieving that perfect golden crisp on your deep-fried shortcakes starts with selecting the right oil. While there isn’t one single “best” oil, the key is to choose one with a high smoke point and a neutral flavor that won’t overpower your dessert. Options like vegetable oil, canola oil, sunflower oil, and rice bran oil are all excellent choices. These oils can be heated to high temperatures without burning, ensuring your shortcakes fry evenly and develop that desirable golden-brown hue.

Beyond the type of oil, temperature control is paramount for successful deep frying. We recommend using a deep-fry thermometer to maintain a consistent oil temperature, typically between 350-375°F (175-190°C). Frying at too low a temperature will result in greasy shortcakes, while too high a temperature will burn the exterior before the inside is cooked through. Safety is also crucial: always use a sturdy, heavy-bottomed pot or Dutch oven, and never fill it more than one-third full of oil to prevent overflow and splatters.

A Taste of Nostalgia: Childhood Memories of Fried Chicken and Shortcake

This dessert isn’t just about the taste; it’s about the feeling it evokes. I vividly recall my mom making traditional strawberry shortcake with fresh berries and those charming little, round store-bought shortcakes. Do you remember how they’d leave a bit of cake on the cardboard? Scraping it off to lick your fingers was a small, treasured moment of childhood bliss. But the shortcake was often just one part of a beloved meal.

Mom had a particular soft spot for fried chicken. Our grocery store trips often ended with that enticing aroma wafting through the aisles. By the time we reached the front door, she’d often declare, “Fried chicken and strawberry shortcake for dinner?” Our faces would light up! It was a rare treat, and we’d be the best-behaved kids in the entire store, just to ensure she wouldn’t change her mind. Back then, grocery store fried chicken was a convenient, awesome way for busy moms to get dinner on the table, a far cry from any modern perception of “frozen and reheated.” This potent combination of savory and sweet, served with love, created indelible memories that still inspire my cooking today.

Achieving Perfectly Fluffy Whipped Cream: Tips and Troubleshooting

No strawberry shortcake, fried or traditional, is complete without a generous topping of luscious whipped cream. Sometimes, however, whipped cream can turn watery, leaving you with a disappointing mess. The most common reason for watery whipped cream is insufficient whipping. It needs to be whipped until stiff peaks form, indicating that enough air has been incorporated and the fat molecules have properly emulsified. Using a very cold bowl and cold heavy cream can significantly help achieve and maintain the desired texture.

Can You Make Whipped Cream with Granulated Sugar?

While you can technically use granulated sugar when whipping cream, it’s not ideal for stability. Granulated sugar crystals are larger and can sometimes make the whipped cream grainy or cause it to deflate more quickly. For the best results, powdered sugar (also known as confectioners’ sugar) is highly recommended. Powdered sugar contains a small amount of cornstarch, which acts as a natural stabilizer, helping the whipped cream hold its fluffy shape for longer without becoming watery.

Beyond the sugar, ensure your heavy cream is at least 36% milk fat for optimal whipping. Chilling your mixing bowl and whisk (or whisk attachment) for 15-20 minutes before whipping can also make a significant difference. Start whipping on medium speed until the cream begins to thicken, then increase to medium-high and gradually add the powdered sugar and any flavorings (like vanilla extract) until stiff peaks form. Be careful not to over-whip, as this can turn your beautiful cream into butter!

Thinking about those childhood meals, filled with the aroma of fried chicken and the promise of strawberry shortcake, still fills me with a warm sense of nostalgia. It makes me yearn for a sunny summer day, a big backyard, and picnic tables laden with delicious food, surrounded by family. It looks like I know exactly what I’ll be making for Sunday dinner – recreating those cherished memories, with a delectable deep-fried twist!

The Shortcut to Deliciousness: Deep Fried Biscuit Donuts

The secret to these incredibly easy Deep Fried Strawberry Shortcakes lies in a clever shortcut: canned biscuits! Yes, ordinary canned biscuits, transformed into perfectly fried donuts. You can use either the flaky layers variety or the southern style; both work wonderfully, though the flaky layers tend to puff up a bit more, creating an airier shortcake. If you’re concerned about the centers not cooking through, simply cut out small donut holes from the center of each biscuit before frying, just as you would with traditional donuts. This not only ensures even cooking but also provides delightful mini-bites for tasting!

Preparation is key: gently separate the biscuits, and for an even more delicate shortcake, you can even separate each biscuit into two thinner rounds. This increases the surface area for that delicious cinnamon-sugar coating. Once fried to golden perfection, these “donuts” become the ideal base for our berries and cream, absorbing just enough flavor without becoming soggy. It’s a testament to how simple ingredients can create extraordinary results with a little creative thinking.

The Secret to Irresistible Strawberries

I won’t keep you waiting any longer, but before you dive into the recipe, make sure to pay close attention to our simple secret for preparing the strawberries. It’s one small step that truly elevates the flavor and texture of the berries, making them extra delicious and juicy. This technique, often referred to as maceration, involves letting sliced strawberries sit with a touch of sugar. The sugar draws out the natural juices from the berries, creating a sweet, syrupy sauce that perfectly coats each slice and infuses them with even more vibrant flavor. We often chat about this in our Fool Proof Angel Food Cake recipe, as it’s a game-changer for any dessert featuring fresh fruit.

The most delicious dessert I’ve ever had, deep fried strawberry shortcakes that are rolled in cinnamon sugar and loaded with berries and fresh whipped cream

Ingredients

  • Peanut or Canola Oil for Frying
  • 1 Package Pillsbury Biscuits, separated into 8 biscuits
  • 1-2 Pints Strawberries, sliced
  • 1-2 Tablespoon Sugar
  • 3/4 Cup Cinnamon Sugar
  • 2 Cups Heavy Cream
  • 1/3 Cup Powdered Sugar, or to taste

Instructions

  1. Heat a large Dutch oven over medium heat filled 1/3 full of oil.
  2. Separate the 8 biscuits again, making 16 smaller rounds.
  3. Add the sliced strawberries and sugar into a dish, stir gently to combine, and set aside to macerate. Read more about this technique in our fool proof angel food cake post.
  4. Carefully drop a couple of biscuit rounds at a time into the hot oil, frying for about 30-60 seconds per side until golden brown and puffed. Turn once.
  5. Remove the fried dough to a paper towel-lined plate to drain excess oil.
  6. Place the cinnamon sugar in a shallow dish. While the fried dough is still warm, gently roll each piece in the cinnamon sugar until coated.
  7. Repeat until all dough is used.
  8. Meanwhile, using a whisk or a stand mixer with a whisk attachment, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whisking until stiff peaks form.
  9. To assemble, place a cinnamon-sugar biscuit on a plate, top generously with whipped cream and the macerated berries. For an extra indulgent treat, create a double-decker shortcake as shown in the photo.
