  2. Make the Roux (for sauce): Sprinkle the all-purpose flour over the sautéed vegetables. Whisk continuously for 30-60 seconds to cook out the raw flour taste and form a roux.
  3. Build the Sauce: Gradually whisk in the heavy cream and chicken broth into the roux. Continue whisking and cook until the sauce thickens to a creamy consistency. Season the sauce with freshly ground black pepper and salt to taste. Remove from heat.
  4. Cook Beef & Onion (for casserole): In a separate large pan, brown the ground beef and the 1/2 minced onion over medium heat until the beef is fully cooked and no pink remains. Drain any excess grease and season with salt and garlic powder.
  5. Prepare Oven & Dish: Preheat oven to 350°F (175°C). Lightly spray an 8×8 inch baking dish with nonstick cooking spray.

  7. Bake & Finish: Bake the covered casserole for 60 minutes. After 60 minutes, carefully remove the foil, sprinkle the cheddar or Colby Jack cheese evenly over the top, and return to the oven, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Optional Garnish: For an extra pop of fresh flavor, sprinkle some fresh thyme or chopped fresh parsley over the casserole just before serving.
