Sometimes two things just belong together, like chips and salsa, cookies and milk, pancakes and syrup, or bacon and eggs. Peanut butter and chocolate are another pair that is a match made in heaven! Like seriously…HEAVEN!! These Peanut Butter Bars are the ultimate combo of chocolate and peanut butter!

Ingredients

  • 3/4 Cup White Sugar
  • 3/4 Cup Brown Sugar
  • 3/4 Cups Margarine *see note
  • 1 Large Egg
  • 1/2 teaspoon Vanilla
  • 3/4 Cup Peanut Butter
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 Cups Flour
  • 1 1/2 Cups Oats

Frosting

  • 1 1/2 Cups Powdered Sugar, plus 1/3 Cup
  • 1/4 Cup Cocoa, Scant
  • 3/4 Cups Margarine, room temperature
  • 1/2 teaspoon Vanilla
  • 1/4 Cup Milk
US Customary – Metric

Instructions

  1. Preheat oven to 350 degrees F (175 C) and prepare a 9×13 inch pan by spraying it with nonstick cooking spray.
  2. Cream white sugar, brown sugar, margarine, and eggs until well blended.
  3. Add vanilla and peanut butter, mix well until smooth.
  4. In a separate bowl, whisk together baking soda, salt, and flour. Then, gradually stir the dry ingredients into the wet mixture, along with the oats, until just combined. Do not overmix.
  5. Spread the mixture evenly into the prepared 9×13 inch pan and bake for 20-22 minutes, or until lightly golden and set.
  6. Cool for at least 30 minutes before spreading with the chocolate frosting.

For the Frosting

  1. In a mixer, combine powdered sugar, scant cocoa, and room temperature margarine. Beat on low speed until combined, then increase speed to medium.
  2. Add vanilla and milk. Continue to beat until the frosting is creamy and smooth.

Regarding the margarine: Yes, really! I know butter or shortening might be tempting, but I stand by my friend Kara’s advice; margarine simply creates the best texture for these bars. Trust the process!
