- 2 Tablespoons Curry Paste
- 1/2-1 Tablespoon Curry Powder (we prefer 1/2-3/4 Tablespoon for balance)
- 1 1/2 teaspoons Fresh Grated Ginger
- 6 Cloves Garlic, Minced
- 1 Onion, Sliced
- 1 Red Bell Pepper, Quartered, seeded and sliced
- 1 Green Bell Pepper, Quartered, seeded and sliced
- 1 1/2 Cups Carrots, Sliced
- 2 Cans Unsweetened Coconut Milk (13.5 ounces each)
- 1 2/3 Cups Cream of Coconut (found in the drinks section)
