Ingredients


  • 14 Tomatoes, quartered (You should end up with 3-4 Cups of pureed tomatoes)


  • 4-6 Leaves Basil, Fresh , Chopped


  • 1 Clove Garlic, minced


  • 1/4 Pound Sausage, Christiansen Farm Maple Sage, the bomb diggity


  • 1/2 teaspoon Sage, Fresh, Minced


  • 1 Carrot, Small-Medium, finely grated


  • 2 Tablespoons Cream Cheese


  • 2 Tablespoons Heavy Cream, or up to 1/4 Cup


  • Salt and Pepper to taste


  • 6 Eggs


  • Cheese if desired, mozzarella is good


  • Crusty Bread or toast

Instructions

  1. Place the tomatoes on a baking sheet and drizzle with olive oil, salt, pepper, basil, and garlic.

  2. Roast in the oven at 425°F (220°C) for 30 minutes.
  3. Remove and let cool slightly.
  4. Place the roasted tomatoes in a blender and puree until smooth.
  5. Set aside.
  6. Heat a large sauce pot over medium heat and add the sausage. Cook until browned and cooked through, about 6-8 minutes, breaking it up with a spoon.
