Dairy and soy free strawberries and cream protein bars are so easy to make and are a great way to lose weight by not eating the wrong foods.

Ingredients

  • 1/4 Cup Fisher Nuts Pecans
  • 1/2 Cup Fisher Nuts Almonds
  • 1/3 Cup Vanilla Protein, We use Complete or Vega
  • 2 Tablespoons Honey
  • 1/2 Cup Maple Syrup
  • 2 Cups Gluten Free Flour Blend or Coconut Flour and Almond Flour Blend
  • 2-3 Tablespoons Coconut Milk, or other dairy free milk
  • 1 Cup Freeze Dried Strawberries, * see note
  • 1 Tablespoon Chia Seeds

Instructions

  1. In a blender, blend the pecans and almonds until smooth like nut butter. Be sure to stop blending and allow the mixture to cool if it starts to heat up, to prevent it from becoming too oily.
  2. In a large bowl, whisk together the freshly made nut butter, vanilla protein powder, honey, and maple syrup until well combined.
  3. Gradually add the gluten-free flour blend (or your coconut and almond flour blend) to the mixture, stirring with a spoon until just incorporated.
  4. The mixture will initially appear crumbly. Add the coconut milk (or your chosen dairy-free milk) one tablespoon at a time, mixing until the mixture can be squeezed in your hand and holds together like a firm pie dough. Be cautious not to overdo it with the milk, as too much will make the bars sticky.
  5. Gently fold in the freeze-dried strawberries and chia seeds. Press the entire mixture firmly and evenly into an 8×8-inch baking pan lined with parchment paper.
  6. Refrigerate the pan for at least 30 minutes to allow the bars to set completely. Once firm, slice into desired bar sizes and store them in an airtight container or ziploc bags in the refrigerator for up to 1 week for optimal freshness.

Feel free to experiment with any freeze-dried fruit you prefer in place of strawberries. If you have trouble finding freeze-dried fruit, you can even use the freeze-dried berries found in cereals like Special K – just pick them out! These bars are wonderfully versatile.
