  • 1 Cup Sweet Corn
  • 1 Package frozen pre-cooked Quinoa and Kale, *or see note
  • 1/4 Cup Parmesan Cheese, grated (plus more for garnish)

Instructions

  1. In a large skillet over medium heat, add the olive oil and minced garlic. Cook until fragrant, about 30 seconds, being careful not to burn the garlic.
  2. Add the chopped zucchini and sausage to the skillet. Sauté for 3-5 minutes, until the sausage begins to brown and the zucchini softens slightly.
  3. Stir in the sweet corn and cook for an additional minute, ensuring everything is well combined and heated through.
