A Culinary Journey Inspired by Nature and Partnerships
Sitting here, bathed in the crisp, inspiring air of the Pacific Northwest, my mind drifts to the lush landscapes and the vibrant palette of autumn that surrounds me. This region, with its invigorating beauty, consistently fuels my culinary creativity and reinforces my desire to craft dishes that are as comforting as they are captivating. It’s in this spirit that I share this remarkable creamy pumpkin pasta, a dish born from a deep appreciation for seasonal ingredients and an exciting new collaboration.
I’m absolutely thrilled to announce my partnership with Fisher Nuts this year. For me, nuts are more than just a snack; they are a versatile ingredient that can elevate any dish, adding texture, depth, and a burst of flavor. My journey with Fisher Nuts began years ago, sparking my love for almonds with a delightful berry salad with lemon dressing—a recipe that quickly became a family favorite. This pumpkin pasta, on the other hand, ignited my passion for pecans, making this partnership a truly natural and harmonious fit. The thought of this dish, with its rich pumpkin sauce and crunchy pecan topping, is already making my stomach rumble!

Crafting an Alex Guarnaschelli-Worthy Dish
The excitement around working with Fisher Nuts intensified when I learned that the incredibly talented Chef Alex Guarnaschelli would be judging their Fresh Twist Recipe Contest. Chef Guarnaschelli is a culinary force, known for her bold flavors and innovative approach. While some might find her on-screen persona intimidating, I’ve always admired her commitment to quality and her ability to transform simple ingredients into extraordinary meals. Years ago, I perfected her big kid mac and cheese, which remains a staple in our home. Inspired by her culinary prowess, I set out to create a dish that I believed would truly impress her – a recipe that combines comfort with a touch of unexpected sophistication. This creamy pumpkin pasta, with its harmonious blend of savory and sweet, is my humble attempt at crafting something “Alex-worthy,” and I genuinely believe she would appreciate its unique charm.

Unlocking the Savory Potential of Pumpkin
While pumpkin often takes center stage in an array of beloved fall and winter dessert recipes, it’s crucial to remember its savory versatility. Pumpkin, at its heart, is a squash, possessing a naturally sweet and earthy flavor that lends itself beautifully to savory preparations. Its creamy texture, when pureed, provides an ideal base for rich sauces, adding a depth of flavor that’s both comforting and distinctive. If you’ve never ventured beyond pumpkin pie, I urge you to try savory pumpkin dishes. For instance, Cassie’s pumpkin grilled cheese is a delicious testament to its savory appeal, combining the warmth of pumpkin with sharp cheddar for an unforgettable sandwich.
This creamy pumpkin pasta sauce exemplifies how easily pumpkin can transform a simple meal. It comes together with remarkable ease, making it a fantastic option for those notoriously busy school nights. Between shuttling kids to sports practices, music lessons, dance rehearsals, and other extracurricular activities, coupled with the arrival of chilly autumn air, I often find myself craving something incredibly delicious yet ridiculously simple to prepare. This recipe fits the bill perfectly. It starts with a simple step that sets the stage for a burst of flavor: toasting pine nuts and then sautéing a delicate blend of garlic and onion in some melted butter. These initial aromatics form the foundation of a truly exceptional sauce that will quickly become a cherished part of your fall recipe collection.

Building the Perfect Creamy Pumpkin Pasta Sauce
The construction of this pumpkin pasta sauce is where simplicity meets sublime flavor. Once your pine nuts are toasted to a golden hue and your garlic and onion have softened in fragrant butter, it’s time to introduce the star ingredient. Carefully “dump” in the pumpkin puree, allowing it to heat through gently and meld with the sautéed aromatics. This step deepens the pumpkin’s natural sweetness and ensures a smooth consistency from the start. The next crucial step involves a quick trip to the blender. Transfer the entire pumpkin mixture into a high-speed blender and process until it achieves an incredibly smooth, velvety texture. This ensures no lumps and a luxurious mouthfeel that coats every strand of pasta beautifully.
Once blended to perfection, return the silky pumpkin base to the saucepan. Begin to bring the heat back up slowly, allowing the flavors to awaken. Now, it’s time to introduce the elements that will transform this into a truly creamy and balanced sauce. Pour in the heavy cream, adding a luscious richness that is signature to comfort food. Follow with chicken broth, which helps to lighten the sauce slightly while enhancing its savory notes. Finally, stir in a generous amount of grated Parmesan cheese. As any cheese lover knows, cheese simply makes the world go round, and in this sauce, it contributes a wonderful salty, umami depth that perfectly complements the pumpkin. Whisk all these ingredients together diligently until they are thoroughly combined and the sauce is smooth and gently simmering. The result is a vibrant, aromatic sauce that is almost too beautiful to cover with pasta, but trust me, you’ll want to!

Good mercy, just look at that vibrant, inviting sauce! The rich, autumnal color and the glossy texture are truly captivating. It’s hard not to get completely absorbed in the sauce, but while it’s simmering to perfection, we’re simultaneously busy preparing the secret ingredient that will elevate this dish from merely delicious to truly unforgettable: the crunchy brown sugar pecans. This topping is fantastically unexpected and provides a textural and flavor contrast that will surprise and delight your palate.

The Magic of Brown Sugar Pecans: A Crunchy Sweet-Savory Topping
While your creamy pumpkin pasta sauce is nearing completion and your pasta is boiling to al dente perfection, turn your attention to the transformative topping: the brown sugar pecans. Begin by finely chopping your Fisher pecans. The smaller pieces ensure an even distribution of flavor and crunch in every bite. Heat a dry skillet over medium heat and add the chopped pecans, toasting them gently until they become fragrant and slightly darker in color. This step is crucial, as toasting enhances their natural nutty flavor, bringing out a deeper, more robust taste that will stand up to the richness of the pumpkin sauce.
Once the pecans are warm and toasted, introduce a knob of butter to the skillet, allowing it to melt and coat the nuts generously. The butter adds another layer of richness and helps the next ingredients adhere. Quickly stir in the brown sugar and a pinch of cinnamon. The brown sugar will melt into a sticky, caramelized glaze, enveloping each pecan piece in a sweet, subtly spiced coating. Stir continuously for just a minute or two, ensuring the sugar doesn’t burn but rather forms a beautiful, glossy finish. As soon as the pecans are fully coated and fragrant, immediately transfer them onto a piece of parchment paper to cool. Spreading them out prevents them from clumping together, allowing them to crisp up perfectly. Once cooled, these candied pecans will be wonderfully crunchy, offering an addictive contrast to the smooth, creamy pasta. Sprinkle these jewels generously over your finished pasta dish for an explosion of flavor and texture that will make every mouthful an adventure.

The Irresistible Allure of Salty and Sweet Combinations
As we all know, the harmonious blend of salty and sweet flavors has transcended a mere trend to become a cherished and enduring culinary principle. This magical pairing works because it cleverly engages multiple taste receptors, creating a more complex, satisfying, and utterly addictive sensory experience. The salt enhances and sharpens the sweetness, while the sugar mellows the salt, resulting in a perfectly balanced symphony on the palate. Think about the enduring popularity of salted caramel, chocolate-covered pretzels, or bacon-infused desserts—these combinations are celebrated because they simply work so incredibly well.
However, despite its widespread appeal, there are still a few categories of dishes where this dynamic duo doesn’t pop up as frequently as it should, and pasta and soup are prime examples. While we readily embrace salty-sweet in other areas—like Oprah’s Favorite Grilled Cheese with its drizzle of honey, or these decadent salted brown butter chocolate chip cookies stuffed with dulce de leche and Nutella, or even breakfast with these delightful apple bacon waffles—pasta and soup often get overlooked. But not anymore!
I am a firm believer in pushing culinary boundaries, and I absolutely refuse to let pasta and soup miss out on this incredible flavor synergy. Our golden loaded potato soup features a subtle drizzle of honey that elevates its savory profile to new heights, and now, this creamy pumpkin pasta joins the ranks of salty-sweet champions. It tastes like the very definition of fall, with its rich, savory pumpkin sauce beautifully punctuated by little pops of brown sugar and the delightful saltiness of Parmesan cheese. The crunchy brown sugar pecans are the crowning glory, adding a textural dimension that transforms this dish into an unparalleled comfort food experience. It’s truly amazing, and I cannot wait for you to try each of these recipes. I highly urge you to pin every single one and let me know your absolute favorite!

Health Benefits of Pumpkin and Pine Nuts
Is Pumpkin Good For You?
Absolutely! Pumpkin is a nutritional powerhouse. It’s abundant in fiber, which aids digestion and promotes satiety, helping to manage weight. It’s also packed with potassium, an essential electrolyte important for blood pressure regulation and heart health. Furthermore, pumpkin is an excellent source of vitamin C, a powerful antioxidant that supports the immune system, and vitamin A (in the form of beta-carotene), crucial for vision and skin health. Incorporating pumpkin into your diet is a delicious way to boost your overall well-being.
Can Pumpkin Puree Be Frozen?
Yes, pumpkin puree freezes exceptionally well! This makes it incredibly convenient for meal prepping and enjoying pumpkin year-round. To freeze, simply transfer your puree into freezer-safe containers or heavy-duty plastic bags, leaving a little headspace for expansion. It will maintain its quality for several months, ready to be thawed and used in your favorite sweet or savory recipes whenever a craving strikes.
Where Do Pine Nuts Come From?
Pine nuts, those delicate and buttery little morsels, are indeed harvested from pine trees. Specifically, they come from the cones of certain species of pine, with Stone pine and Swiss pine being common varieties known for their edible seeds. While some pine nuts are harvested locally, a significant portion of the world’s pine nut supply, particularly the more common varieties, originates from various regions across Europe, Asia, and North America, with specific flavors and sizes depending on their origin.

Creamy Pumpkin Pasta, it’s fantastically unexpected.

Ingredients
- 8 Ounces or 1/2 box of Campanelle Pasta
For the Sauce
- 2 Cloves Garlic
- 1/4 Cup Pine Nuts
- 2 Tablespoons Butter
- 1 Tablespoon Minced, Dry Onion
- 1 Cup Pumpkin Puree
- 3/4 Cup Heavy Cream
- 1/2 Cup Chicken Stock
- 1/4-1/3 Cup Parmesan, grated
- 1/4 teaspoon Nutmeg
- Salt to taste
For the Nuts
- 1/4 Cup Pecans, chopped
- 1 Tablespoon Butter
- 1 1/2 Tablespoon Brown Sugar
- 1/8 teaspoon Cinnamon
Instructions
- In a small skillet, add the garlic cloves with their peels on. Cook, turning occasionally, until they turn golden and fragrant.
- Add the pine nuts to the same skillet and toast them until lightly golden. Remove both the garlic and pine nuts from the skillet.
- Once cooled, peel and mince the roasted garlic.
- In a large skillet, add the minced garlic, butter, and minced dry onion, along with the toasted pine nuts. Cook until the butter is melted and the onions are softened.
- Add the pumpkin puree to the skillet and stir well to combine all ingredients. Heat through for a few minutes.
- Carefully transfer the pumpkin mixture into a blender and blend until completely smooth and creamy.
- Return the smooth pumpkin mixture back into the large skillet. Add the heavy cream, chicken stock, grated Parmesan cheese, and nutmeg.
- Whisk all ingredients together until the sauce is well combined and smooth. Season with salt to taste. We found about 1 tablespoon of kosher salt worked perfectly (if using regular table salt or sea salt, start with 1-2 teaspoons and adjust as needed).
- Meanwhile, bring a large pot of salted water to a rolling boil. Add your Campanelle pasta and cook according to package directions until al dente.
- While the pasta and sauce are cooking, begin preparing the pecan topping. In a separate small skillet, add the chopped pecans and toast them over medium heat until fragrant.
- Add the butter to the skillet with the toasted pecans and cook until melted, ensuring the nuts are coated.
- Quickly stir in the brown sugar and cinnamon. Continue to stir for a minute or two until the sugar is melted and coats the pecans in a glossy glaze.
- Immediately spread the coated pecans out onto a piece of parchment paper to cool. This will help them crisp up and prevent sticking.
- Once the pasta is cooked, drain it and add it directly to the creamy pumpkin sauce in the large skillet. Fold gently to combine, ensuring every piece of pasta is coated. Taste and add more salt if desired.
- Serve the creamy pumpkin pasta immediately, garnished generously with a sprinkling of the crunchy brown sugar pecans. Enjoy!
