What is Tri Tip Steak? The Grill Master’s Secret Weapon

Tri-tip steak is a hidden gem in the world of beef cuts, highly prized by those in the know for its robust flavor and tender texture. It’s a distinct, triangular-shaped cut taken from the bottom sirloin, often overlooked but incredibly versatile. This particular cut is also known by several other names, including “triangle steak,” “bottom sirloin steak,” or, famously, “Santa Maria steak,” a nod to its deep roots in the barbecue culture of Santa Maria, California.

What makes tri-tip so special? Its unique muscle structure contributes to a rich, beefy flavor that stands out from other cuts. While lean, it possesses enough marbling to ensure a juicy and tender result when cooked properly. Unlike some tougher cuts that demand slow cooking, tri-tip excels with high-heat grilling or roasting, making it an ideal choice for those seeking a quick yet satisfying meal without compromising on taste or quality. Its distinctive shape also means it has a lean end and a fattier end, allowing for various degrees of doneness across the cut, pleasing everyone at the table.

Why Choose a Glazed Tri Tip for Your Next Cookout?

Opting for a glazed tri-tip brings a whole new dimension to your grilling experience. The glaze isn’t just an afterthought; it’s an integral component that transforms a great cut of meat into an unforgettable culinary masterpiece. As the tri-tip cooks, the glaze caramelizes, forming a magnificent crust that locks in moisture and infuses the meat with a sweet, tangy, and deeply savory complexity. This beautiful crust offers an irresistible texture contrast to the tender interior of the steak, making every bite a delightful revelation.

Beyond the incredible flavor, glazing the tri-tip enhances its visual appeal, giving it a glossy, inviting finish that’s sure to impress. This method also helps to keep the lean tri-tip moist during the high-heat grilling process, preventing it from drying out and ensuring a succulent outcome. The combination of its natural beefy flavor, enhanced by a carefully crafted glaze, and its suitability for quick grilling makes glazed tri-tip a standout choice for any barbecue. It offers a gourmet experience without the gourmet effort, making it a perfect dish for entertaining guests or simply treating yourself to an exceptional meal.

Mastering Doneness: How to Achieve Your Perfect Steak

Achieving the perfect doneness for your tri-tip is crucial to unlocking its full potential. While the “touch test” can be a helpful guide for experienced grillers, the most accurate and reliable method for determining steak doneness is by using a high-quality meat thermometer. Different levels of doneness correspond to specific internal temperatures, ensuring that your tri-tip is cooked exactly to your preference every time.

Here’s a quick guide to internal temperatures for beef doneness (remember to remove the steak from the grill a few degrees BEFORE the target temperature, as it will continue to cook while resting):

  • Rare: 125-130°F (52-54°C) – A cool, red center.
  • Medium-Rare: 130-135°F (54-57°C) – A warm, red center. This is often recommended for tri-tip to maintain tenderness and juiciness.
  • Medium: 135-140°F (57-60°C) – A warm, pink center.
  • Medium-Well: 140-145°F (60-63°C) – A slightly pink center.
  • Well-Done: 150°F (66°C) and above – Little to no pink, often firmer.

For those who prefer a more tactile approach, the “touch test” can serve as a supplementary indicator. Gently press the center of the steak with your finger:

  • Medium-Rare: Should feel soft and springy, similar to pressing the fleshy part of your palm below your thumb.
  • Medium: Will offer more resistance, akin to touching your chin.
  • Well-Done: Will feel quite firm, like touching your forehead.

Always remember that resting the meat after cooking is paramount. Tent the cooked tri-tip loosely with foil and allow it to rest for at least 5-10 minutes. This critical step allows the juices to redistribute throughout the meat, ensuring every slice is as tender and flavorful as possible.

Glazed Tri Tip! This is probably one of my new favorite ways to grill. The glaze is ridiculously good.

Ingredients

  • 4 Pounds Tri Tip

Rub Mixture

  • 1/4 teaspoon Chili Powder
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon Soy Sauce
  • 1 Tub Beef Stock, Knorr Homestyle

Pepper Mix

  • 2 teaspoons Garlic Salt
  • 1/2 teaspoon Kosher Salt
  • 2 teaspoons Lemon Pepper
  • 1 teaspoon Pepper

Glaze for Basting

  • 2 Tablespoons Apple Cider Vinegar
  • 1/4 Cup Apple Cider
  • 1/2 teaspoon Curry Powder
  • 1/2 teaspoon Lemon Pepper
  • 1 Tablespoon Worcestershire
  • 4 Cloves Garlic, minced
  • 4 Tablespoons Butter, unsalted
  • Pinch Salt

Instructions

  • About a half hour before grilling, remove the meat from the fridge so that it can come closer to room temp before cooking. This ensures more even cooking.
    4 Pounds Tri Tip
  • Use this time to mix together the rub, combining chili powder, Worcestershire, soy sauce, and beef stock. Rub this mixture generously into the tri-tip.
1/4 teaspoon Chili Powder, 1 Tablespoon Worcestershire, 1 Tablespoon Soy Sauce, 1 Tub Beef Stock
  • Next, prepare the dry rub.
  • Sprinkle the pepper mix (garlic salt, kosher salt, lemon pepper, and black pepper) evenly on both sides of the meat and set aside until you’re ready to grill.
2 teaspoons Garlic Salt, 1/2 teaspoon Kosher Salt, 2 teaspoons Lemon Pepper, 1 teaspoon Pepper
  • In a saucepan, combine all the glaze ingredients: apple cider vinegar, apple cider, curry powder, lemon pepper, Worcestershire, minced garlic, unsalted butter, and a pinch of salt. Bring the mixture to a simmer over medium heat for 5-7 minutes, whisking continually to ensure all ingredients are well combined and slightly thickened.
  • Remove the glaze from the heat and set it aside until you’re ready to use it for basting.
  • Reserve a small portion of the glaze in a separate bowl. This will be used as a finishing sauce for serving, ensuring hygiene and fresh flavor.
2 Tablespoons Apple Cider Vinegar, 1/4 Cup Apple Cider, 1/2 teaspoon Curry Powder, 1/2 teaspoon Lemon Pepper, 1 Tablespoon Worcestershire, 4 Cloves Garlic, 4 Tablespoons Butter, Pinch Salt
  • Preheat your grill, setting one side to high heat for searing and the other to a lower, indirect heat for finishing.
  • Place the tri-tip directly over the high heat and close the lid. Sear the meat for approximately 2 minutes per side to develop a beautiful crust.
  • After searing, move the tri-tip to the cooler, indirect heat side of the grill. Baste generously with the prepared glaze.
  • Continue to cook the tri-tip for 10-11 minutes, then flip the meat over and reapply the glaze to the other side.
  • Allow the meat to cook for another 6 minutes, basting again. Continue cooking for a few seconds more for rare, 1-2 minutes for medium, and 3 minutes for well-done, or until your desired internal temperature is reached (refer to the doneness guide above).
  • Once cooked, remove the tri-tip from the grill and tent it loosely with aluminum foil for about 5 minutes. This resting period is essential to allow the juices to redistribute, ensuring a tender and moist steak.
  • Slice the tri-tip thinly against the grain, sprinkle with a little sea salt for extra flavor, and serve immediately with the reserved finishing glaze on the side.

Expert Tips for Grilling Glazed Tri Tip Like a Pro

Transforming a simple cut of beef into a culinary masterpiece requires attention to a few key details. With these expert tips, you can ensure your Glazed Tri Tip is always a showstopper, bursting with flavor and perfectly tender.

Marinade for Maximum Flavor

While our recipe includes a flavorful rub and glaze, don’t underestimate the power of an extended marinade. For an even deeper flavor penetration, consider marinating your tri-tip in the rub mixture (minus the beef stock initially) for at least 4 hours, or ideally overnight, in the refrigerator. The Worcestershire and soy sauce in the rub act as tenderizers and flavor enhancers, allowing the savory notes to truly meld with the meat. Add the beef stock as part of the glaze, not the initial marinade, to control the moisture balance during the longer marinating process.

Achieving the Perfect Sear

The initial high-heat sear is crucial for developing that irresistible, deeply caramelized crust that makes glazed tri-tip so appealing. Ensure your grill is screaming hot before placing the meat on it. Listen for that satisfying sizzle! Don’t overcrowd the grill, as this can lower the temperature and lead to steaming rather than searing. A good sear seals in juices and creates a complex flavor profile that forms the foundation of this dish.

The Importance of Resting

This cannot be stressed enough: resting the meat after it comes off the grill is a non-negotiable step. As the tri-tip cooks, the muscle fibers contract, pushing the juices towards the center. Cutting into the meat immediately will cause these precious juices to spill out, leaving you with a dry, less flavorful steak. By tenting it loosely with foil and allowing it to rest for 5-10 minutes, you give the muscle fibers a chance to relax and reabsorb those flavorful juices, resulting in a much juicier and more tender final product.

Carving Against the Grain

Tri-tip, like many cuts of beef, has a distinct grain. However, with its triangular shape, the grain can change direction in different parts of the cut. To ensure maximum tenderness, always slice the meat thinly AGAINST the grain. This shortens the muscle fibers, making each bite incredibly tender and easy to chew. Take a moment to observe the direction of the muscle fibers before you begin slicing, adjusting your knife angle as needed.

Perfect Pairings: What to Serve with Glazed Tri Tip

A beautifully grilled Glazed Tri Tip deserves equally delicious accompaniments. Pairing your steak with the right side dishes can elevate the entire meal, creating a balanced and satisfying dining experience. Here are some suggestions:

Hearty Side Dishes

For a classic and comforting meal, consider serving your tri-tip with creamy mashed potatoes or roasted potatoes tossed with rosemary and garlic. A simple potato salad or a flavorful rice pilaf can also be excellent choices. If you prefer something lighter, a quinoa salad with fresh herbs and vegetables offers a nutritious and refreshing contrast to the richness of the beef.

Fresh Vegetables and Salads

Complement the rich flavor of the tri-tip with vibrant, fresh vegetables. Grilled asparagus, balsamic-glazed Brussels sprouts, or a crisp green salad with a light vinaigrette all make fantastic additions. A corn on the cob, especially when grilled, adds a touch of sweetness that pairs wonderfully with the savory glaze.

Beverage Recommendations

To truly enhance the dining experience, select a beverage that complements the tri-tip’s robust flavors. A full-bodied red wine, such as a Cabernet Sauvignon, Merlot, or Zinfandel, is a classic choice that stands up well to the richness of the beef and the sweetness of the glaze. For beer enthusiasts, a robust porter, a malty amber ale, or a crisp lager can also be excellent pairings. Non-alcoholic options like sparkling cider or a spiced iced tea can also offer a refreshing contrast.
