This particular recipe takes all the comforting flavors of a classic cinnamon roll and transforms them into a celebratory sheet cake that’s bound to impress everyone who takes a bite.

Mastering the Sheet Cake: From 9×13 to Crowd-Pleaser

One common question bakers face is how to adapt a standard 9×13-inch cake recipe for a larger sheet pan. While it might seem intuitive to simply double the recipe, that’s often a recipe for disaster (or at least, an overflowing oven!). Sheet pans, typically 13×18 inches for a half-sheet, have lower sides than standard cake pans. Doubling a 9×13 recipe would usually result in too much batter for the sheet pan’s capacity, leading to spills and a messy oven.

Through a bit of kitchen experimentation and research, it was discovered that a general rule of thumb for converting a 9×13-inch cake recipe to a standard half-sheet pan (13×18 inches) is to multiply the ingredients by 1.5. This calculation provides the perfect amount of batter to fill the larger pan without overflowing, ensuring a beautifully even bake. This recipe was carefully adapted from a wonderful Cinnamon Roll Snack Cake, scaled up to ensure that every serving of this Cinnabon-inspired treat delivers the ultimate satisfaction. The goal was to create a truly from-scratch Cinnabon cinnamon roll sheet cake, moving beyond the convenience of a cake mix to achieve an unparalleled depth of flavor and texture.

The result of this careful scaling was nothing short of perfection. The cake baked up beautifully, evenly distributed across the sheet pan, ready to be adorned with its signature swirls and lavish frosting. This attention to detail in scaling ensures that you get a substantial, crowd-pleasing dessert that retains all the delicious qualities of its smaller counterpart.

The Irresistible Cinnabon Cinnamon Roll Sheet Cake Experience

This Cinnabon Cinnamon Roll Sheet Cake is a symphony of textures and flavors. Imagine a cake that’s incredibly soft and fluffy, with a delicate hint of butter, all interwoven with the most delightful cinnamon swirls. Each bite delivers that familiar, comforting warmth of cinnamon paired perfectly with a moist, tender crumb. The secret to its charm lies not just in the ingredients, but in the technique of creating those iconic swirls.

When it comes to swirling the cinnamon sugar mixture into the cake batter, there’s a delicate balance to strike. It can be tempting to keep swirling, aiming for perfectly defined lines. However, remember that the cinnamon mixture will naturally sink a little into the batter, and the baking process will bring those beautiful swirls back to the surface, making them more visible. Over-swirling can actually lead to the cinnamon mixture becoming too incorporated into the batter, which can affect the cake’s ability to bake correctly and, more importantly, might result in large gaps or “holes” within the cake. The goal is distinct, delicious swirls, not a fully marbled effect. A truly authentic Cinnabon Cinnamon Roll Sheet Cake should have those enticing pockets of cinnamon, even if the cake has a slight dip where the swirls are most concentrated – that’s perfectly normal and part of its charm.

To achieve the best results, after drizzling the cinnamon mixture over the batter, use a toothpick or a knife to gently create swirling patterns. A few elegant strokes are all that’s needed to distribute the cinnamon throughout the cake, ensuring every slice is imbued with that irresistible spice. The buttery notes in the cake itself provide a perfect foundation, making the cinnamon shine without being overpowering. This cake is not just a dessert; it’s an experience, bringing the joy of bakery-fresh cinnamon rolls right to your kitchen in an easy-to-share format.

Introducing the Heavenly Cooked Vanilla Cream Cheese Frosting

No cinnamon roll cake would be complete without a truly exceptional frosting, and this recipe delivers with its innovative Cooked Vanilla Cream Cheese Frosting. We’ve taken the beloved concept of a classic cooked vanilla frosting and elevated it by incorporating the tangy richness of cream cheese. This brilliant combination offers the best of both worlds, satisfying both those who adore a thinner, glazed-style cinnamon roll topping and those who crave the indulgent, creamy texture of traditional cream cheese frosting.

The cooking process gives this frosting a unique smoothness and a delightful depth of flavor that can’t be achieved with a simple powdered sugar glaze. By gently heating the butter, sugar, heavy cream, vanilla, and corn syrup, the sugars fully dissolve, resulting in an incredibly smooth and glossy base. Once this base is removed from the heat, the cream cheese and powdered sugar are beaten in, creating a luscious, spreadable frosting that retains the characteristic tang of cream cheese while offering the stability and sheen of a cooked glaze.

This frosting perfectly complements the warm spices and tender crumb of the Cinnabon Cinnamon Roll Sheet Cake. Its slightly thinner consistency than a very thick buttercream allows it to melt just slightly into the warm cake, creating an even more harmonious blend of flavors and textures. It’s truly a revelation for anyone who appreciates a frosting that’s both flavorful and incredibly smooth, offering a decadent finish to an already extraordinary dessert. Prepare for this frosting to become your new go-to for all your cinnamon-infused baking endeavors.

The Authentic Cinnabon Taste, Reimagined

The moment you take your first bite, you’ll understand why this is called the Cinnabon Cinnamon Roll Sheet Cake. It genuinely captures the essence of those iconic Cinnabon cinnamon rolls – that signature blend of rich, sweet cinnamon, soft, pillowy dough, and an abundance of creamy frosting. But instead of individual rolls, you get a magnificently shareable sheet cake, making it ideal for any occasion.

What makes this cake taste so unmistakably like Cinnabon? It’s the meticulous balance of ingredients and techniques. The generous amount of cinnamon and brown sugar in the swirl mixture penetrates the tender cake, infusing every fiber with that classic spice. The buttery cake base provides the perfect counterpoint, creating a moist and flavorful canvas. And of course, the star component, the cooked vanilla cream cheese frosting, is a game-changer. It’s thick enough to provide that creamy mouthfeel but also boasts the slight “glaze” quality reminiscent of the original Cinnabon rolls, allowing it to coat the cake beautifully and melt slightly into the warm layers.

This isn’t just a cake with cinnamon; it’s an homage to a beloved classic, delivering all the nostalgic flavors in a convenient, crowd-pleasing form. Prepare yourself and your guests for a truly delightful experience that will transport you straight to the heart of your favorite bakery. It’s rich, it’s sweet, it’s perfectly spiced, and undeniably good!

Cinnabon Cinnamon Roll Sheet Cake with cooked vanilla cream cheese frosting
It’s happening!! I love sheet cakes! This Cinnabon cinnamon roll sheet cake is one of my newest obsessions. Plus, Cooked Vanilla Cream Cheese Frosting!

Ingredients

Filling

  • 1 1/2 Cup Brown Sugar, loosely packed
  • 6-7 Tablespoons Ground Cinnamon
  • 15 Tablespoons Butter, melted

Cake

  • 1 1/2 Cup Sugar
  • 1 Cup Unsalted Butter, room temperature
  • 1/2 Cup Sour Cream, plus 1 tablespoon
  • 3/4 Cup Milk
  • 3 Large Eggs
  • 3 teaspoon Vanilla Extract
  • 3 Cups All-Purpose Flour
  • 3 teaspoon Baking Powder
  • 3/4 teaspoon Salt

Icing

  • 4 1/2 Tablespoon Salted Butter
  • 3/4 Cup Sugar
  • 1 Cup Heavy Whipping Cream, plus 2 tablespoons
  • 1 1/2 teaspoon Vanilla Extract
  • 4 1/2 teaspoon Corn Syrup
  • 4 Ounces Cream Cheese
  • 2-3 Cup Powdered Sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13×18 inch half-size baking sheet well.
  2. To make the cinnamon filling, combine the brown sugar and cinnamon in a medium-sized bowl.
  3. Add the melted butter and mix until well combined. Set aside.
  4. To make the cake batter, combine the sugar and room temperature unsalted butter in a large mixer bowl. Beat on medium speed until the mixture is light in color and fluffy, typically 3-4 minutes. This creaming step is crucial for achieving the right cake texture.
  5. Add the sour cream and mix until fully incorporated, scraping down the sides of the bowl as needed.
  6. Pour in the milk and mix until well incorporated and smooth.
  7. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the mixture is smooth.
  8. In a separate bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt.
  9. Gradually add the dry ingredients to the wet batter, mixing on low speed until just combined and smooth. Be careful not to overmix.
  10. Pour the cake batter into the prepared sheet pan and spread it into an even layer using an offset spatula.
  11. Drizzle the cinnamon sugar mixture evenly over the top of the cake batter. It should cover most of the cake’s surface.
  12. Use a toothpick or a knife to gently swirl the cinnamon mixture into the batter. Don’t worry if the swirls aren’t perfectly visible at this stage; they will become more prominent during baking. Avoid over-swirling to prevent the cinnamon from disappearing entirely.
  13. Bake the cake for 22-24 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Remove from the oven and let it cool slightly while you prepare the icing.

Icing

  1. To make the icing, combine all icing ingredients except for the powdered sugar and cream cheese in a small saucepan. This includes the salted butter, granulated sugar, heavy whipping cream, vanilla extract, and corn syrup.
  2. Heat the mixture over low heat, stirring occasionally, until the sugar is completely dissolved.
  3. Once the sugar is dissolved, increase the heat to medium and bring the mixture to a boil. Boil for exactly 3 minutes, stirring occasionally to prevent scorching.
  4. Immediately remove the saucepan from the heat and carefully pour the hot mixture into a heat-proof glass bowl.
  5. Using a hand mixer or stand mixer, beat in the cream cheese until smooth. Gradually add the sifted powdered sugar, beating until the icing is smooth and has reached your desired consistency. It should be thick enough to coat the back of a spoon but still pourable.
  6. Allow the icing to cool slightly and thicken for a few minutes before pouring.
  7. Pour the warm icing evenly over the still-warm (but not hot) cake. Spreading it while the cake is warm allows the frosting to melt slightly and seep into the cake, enhancing its moisture and flavor.
  8. Serve warm and enjoy!
