Ingredients

  • 2 Cups Sugar
  • 1 1/2 Cups Butter Flavored Shortening, or regular shortening or butter but they are more dry with butter
  • 3 Eggs
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon Extract
  • 4 Cups Flour
  • 1 1/2 teaspoons Soda
  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 Zest Lemon
  • 3/4 Cup Brach’s Lemon Drops – 9oz

For the Glaze

  • 3 Cups Powdered Sugar
  • 2 Juiced Lemons
US Customary – Metric

Instructions 

  • Preheat oven to 350 degrees F (175 C). Prepare baking sheets by lining them with parchment paper.
  • In a large mixing bowl, cream together the sugar and shortening for 1-2 minutes until light and fluffy. Beat in the eggs one at a time, followed by the vanilla and lemon extract, ensuring everything is well combined.
    2 Cups Sugar, 1 1/2 Cups Butter Flavored Shortening, 3 Eggs, 1 teaspoon Vanilla, 1 teaspoon Lemon Extract
  • In a separate bowl, whisk together the flour, soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Stir in the lemon zest and the finely crushed lemon drops powder (prepared by blending lemon drops in a blender until powdered). Be careful not to overmix.
    4 Cups Flour, 1 1/2 teaspoons Soda, 1 1/2 teaspoons Baking Powder, 1 teaspoon Salt, 1 Zest Lemon, 3/4 Cup Brach’s Lemon Drops – 9oz
  • Roll the dough into uniform balls (about 1.5 inches in diameter), then slightly flatten each ball with the palm of your hand. Place them on the prepared baking sheets, leaving enough space between them. Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are just set.
  • Remove from oven and let cool slightly on the baking sheet for a couple of minutes before transferring to a wire rack.
  • While the cookies are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth and of drizzling consistency.
